Thanks for the reaction. I think they made this song their own as well. Since you asked, I'll send in request for another song from this same show with the guitar player on fiddle. After that reaction, I'll challenge you to define their genre! The single microphone is common in bluegrass. I think the dance the musicians do around the single mic is part of the performance, quite artistic at times.
They perform most of their songs with a standard array of microphones. They do a few songs every show with the tight harmony and they for the old timey method of using one microphone.
I really enjoy your thoughts on Sierra's voice. I think you nailed it and I've never thought about her voice in exactly those terms. great insight.

The Guitar player here, Olver Bates Craven, also plays the fiddle - usually alternating with an electric Fender Telecaster and only rarely the acoustic guitar. So, the group does have a number of songs that strongly feature the fiddle. They are also touring with a drummer now. In this video it is Geof Saunders on Bass, and Joshua Rilko on Mandolin.
Sierra also plays the fiddle -- very well. Listen to her on Fox Hunt.
It's almost identical to John Anderson's original. Different instruments (Sierra has no drums). Melodically and phrasing and cadence are exactly the same bar for bar. SHaring one mic is a choice.
