Tips: 1.I’ve used Dutch oven, cast iron, or heavy bottom pot. 2. Foil the bottom of pot prevent damage 3. Preheat stones for 45min on medium low heat 4. Add little liquid smoke to the marinate (gives that smoky flavor) 5. After packing food, cover with foil, on top foil, weigh it down with few foil wrapped bricks 🧱. Cover again 6. Cook for 2hrs at low heat. 7. Enjoy 😉 You can do this in oven as well, trays with lip, or use foil as sealing lid.
Ok.... This has become my Thanksgiving tradition now... Did pot lovo for the 2nd time....n people it always turned out perfect.. I made chicken, dalo, palausami, lamb shanks and fish... Goodness.....no stress... Love it...thank you so much..
Medium high heat for an hour and medium to low for the second hour. I suggest put dalo or Kumala towards the top as it gets really soft if you leave it towards the bottom of the pot.
@@VinaySingh-in5ck Hello Vinay... So it you use rocks for the bottom... I'm planning to do this, this weekend.. Does the pot get burnt in the bottom... I'm planning to cook some chicken, lamb shanks, dalo n palusami
Hello Aunty, bula Vinaka. I'm planning to try this, this weekend. But unfortunately I dont have the banana leave or the stems....wat else can I use unstead
Yes the pot will burn with the juices from the lovo wrapped food. What i do is have aluminum tray at the bottom of the pot and lay the rocks on top of the tray. The burn will be limited to the tray and for easy cleanup.
@@shaleenchand7331 I didn’t have banana leaves either. Just damp towels and place is over the aluminum foil. When you cover the pot, ensure to place something heavy on the lip to prevent heat escape.
@@VinaySingh-in5ck Thank you so much... Looking forward to try this..... Bit scared but let see how it comes out... I'm a big fan of fiji style lovo....it bring backs the fijian memories..... So looking forward to some chicken, lamb shanks, palusami, fish n some dalo...
Yawa fancy kadina yeah meself late granpa did that decades ago how to make easy pot roast lovo using stones and bananas stalks leaves. The only difference is we used kerosene stove inside the kitchen.
