I'm thinking about trying to raise some Tilapia, I'm a water and fish guy whole life. But never have raised fish that we can eat.

Its pretty much the same thing, good water good fish. But you do need to take into account that what they eat is also what you eat so best to feed them good. I prefer organic fish feed. Also many of the medications that you use for ornamental fish you don't want to use for edible fish. So you will have to treat disease differently.

Interesting that you lost bluegill. I'm thinking of giving them a shot. The PNW heatwave of 2021 destroyed my attempt to do rainbow trout so I'm back to just the countless goldfish still. At least I have a chiller now in case the heat becomes a normal thing.
Ya it is strange, they are supposed to be very hardy. Plus my parameters are all good, its all a learning experience so hopefully I figure it out eventually.
I tried rainbow trout before, but same it got to warm for them.
