Though I still think some of the ordinaries and charges still had meaning from the start, like lions symbolising courage and nobility, and crosses implying devotion. Mixed with strong colours and a striking design you can be identified and remembered. I bet the modern trend of adding more stuff and carefully thinking of meaning is pretty much a result of necessity, all the simple striking designs are taken already and you gotta do something different to avoid picking a design that already exists, otherwise the heraldry authorities won't grant the design to you.
