I bought a cast iron seasoned mirror finish dosa tawa from you. My problem is dosa is getting over roasted in the middle even in simmer or medium heat. Can you suggest what is the reason without fail.
Wash the vessel. Sprinkle table salt. Rub all over softly. Rub with a kitchen towel. Wash. Heat it in gas. Apply oil castor. Rub all over. Cool. Wash. Heat it stove. Heat castor oil. Fry chopped big onion all over. Take it out. Rub with kitchen towel. Pour batter. On the 3rd time the tawa will be well seasoned.
After usage rub with kitchen towel all over. No water should be applied or washed in the tawa. If u want u can do once in a week. Otherwise the seasoning will get removed. Now heat the tawa and apply oil u use to cook dosa all over. Cool. Place it in a neat cloth not paper.
Tomato or tamarind is not an advisable remedy to season iron or cast iron vessels. Only big onion. Keep cut big onion on ur cook to in a fork and rub on the tawa if u have any doubts on the tawa.
