What could be more iconic for breakfast than eggs and sausage? Replacing the animal proteins with plant based sources makes this meal healthy and nutritious as well as delicious.     I made this today for Easter. I thought there was no way it would taste like scrambled eggs and was so pleasantly surprised that it did!! I love this combination!! I froze the leftovers in individual glass containers and look forward to enjoying them also! I gotta say, this new way of eating not only has me feeling fantastic... it's fun!!! Thank you!!

    This scrambled tofu is damn good. I only had paprika previously but used the smoked today and it tastes just great. Will be a regular dish in this house. Absolutely love it. Thank you again, and again.

    I made this today and was skeptical about the 'sausage' but holy cow!!! So delicious and the tofu scramble is also very good. I decreased the fennel since not a huge fan even though I did love black licorice. Not anymore. :) It does have a place in this recipe to give it that sausage flavor. Incredible. Jill, you are brilliant. Thank you so much for your efforts. Love your videos and echo others who state you are relaxed and confident in your presentation.

    It is my belief that if you have the right spices, herbs and flavorings, you can make anything taste like whatever you wish. Meat products, eggs, chicken, etc. by themselves without any seasonings aren't good. You can do the same thing with vegetable based foods. You can take beans or chickpeas, smash them up with seasonings and make great, tasty patties, and if you didn't tell anyone that it wasn't beef or chicken, they probably wouldn't know. I am discovering that for myself. It's all in the seasonings and the texture.

    I'm just getting started with the whole food plant based lifestyle. This recipe looks like a nice one for the weekend when I have a bit more time. I haven't tried the tofu "egg" scramble but I learned from another site that the addition of black salt adds an eggie taste to the tofu. I'm not sure about that, but I will give it a try and let you know. Thanks for all the recipes and suggestions.

    Excellent recipe! I think I will give the sausage a try using the traditional southern taste of sage. If that doesn't work then I will use fennel. I like the idea of it being baked!

    I love to watch you cook. Went to market today found Braggs and lots of pretty spices. I got kale. I went to a vegan restaurant and had kale high pro salad- I am diving in.Hubby is a carnivore but if I cook he will eat. I feel good.

    Order some black salt from Amazon it has a sulfur taste cause it comes I think from a volcanic area. Makes it even taste just like egg. Use it to make vegan egg salad. Thanks another great video! Judy

    I tried making just the scrambled egg recipe because I've been having a craving for that and it wasn't as good as expected, I ididn't like flavor of the spices but I liked the texture of it

    I couldn’t do it. I just couldn’t do it. I’m sure it’s great and everything but, I cannot imagine it would be a proper substitute for me to convince myself that’s just like eggs. I’m glad that there are people who enjoy it though. It takes all kinds to make this world go round.

    I would like this for my weekend breakfast as I make sure my weekend breakfast is different than during the week.....I had a thought about meat words - ex: sausage = vausage, meatloaf = veatloaf, eggs = veggs - this is what I'm using - haha!! :)

    This reminds me of Denver Omelette which I used to love. I am wondering if you tried to add nutritional yeast to either the sausage or the tofu to get some cheesy? I think it would be better to call it sausage patties because we are prone to think of sausages in link form? The smokey part is really important, can't wait to try. I have given up tofu because of questionable soybeans being gmo, just because organic doesn't necessarily mean legitimately non gmo. So much to concern about these days! Lovely job.

      Have you tried Tofu that is in the brine...fermented water! The health-food stores (small ones) generally carry this in a large bucket, gmo free!

      Most of our recipes are for more than one serving and all of the recipes have the servings listed. We recommend freezing extras so meal prep is easy on busy days.

    Just because a package is labeled organic does not mean it is non gmo... legislation was passed so that now gmo products do not have to be labeled... I thought the same thing - but after doing research - I am just going to assume that anything that is not clearly marked on the package as NON gmo - it will be gmo.. especially soy products.. really great recipe

    I don't like to name things like "eggs" or "sausage" because when I eat and it tastes so different I get upset... :0. I am trying to keep with the whole plant diet but is really hard sometimes.

      There is plenty of iodine in potatoes, cranberries, prunes, bananas, corn, strawberries and seaweed just to name a few.
      I take a B12 supplement and get plenty of omegas from flax, chia, sunflower seeds and nuts 🤗

    Thank you we're new subscribers. Switch to Plant Base. So, we're new to everything. Do you have a startup Plant Food Cookbook for newbies? So, worried not getting enough nutrients for our body. How can you tell? Abandoned all meats, salt/sugar.

      My family and I have been doing this for almost 4 years and I can honestly tell you that we never felt this good when we were eating all the other stuff like meat and dairy. I haven't experienced any lows of eating this way or noticed any deficiencies. We take a B12 supplement and a D in the winter but other than that I think eating Plant Based is going to give you more than enough nutrients to be healthy and full of vitality as long as you eat a diversity of fruit and vegetables.

    Hello I have been enjoying your recipe. My concern about tofu . Is tofu good for people with fibroids? What best dish can you recommend to balance hormones and estrogen and shrink fibroid unblock fallopian tubes and get pregnant naturally by eating a whole plant based diet.     Hi Jill, why call them scrambled eggs or sausages still for any veg receipe, thats what we are trying to get away from n eat veges..... why not give them vegan names instead like vegetable breakfast with chickpea tikkis .... I will definitely make it .... I have been making your recipes and they come out to be delicious most, thanku so much for inspiring me to follow your recipes.

      No way, I call them scrambled eggs and sausages, to rekindle the flame of my childhood when we ate eggs and sausages, such great memories and great times...so, we stick with this , eggs and sausages are sooo great, it is just that they are not good for your tissues, so make it this way, yet stick with the beautiful and wonderful scrambled eggs and sausages-my mouth is watering just saying it!!!!!

    I have heard other vegans say that tofu is not good for you because it is soy based. I know you buy organic and so have I but does that make it better? What is your opinion on this?

      To be honest, it gives my hubby terrible gas so I don’t use it as often as I would like. The healing benefits are so great, it is a shame for me☹️
