Lazy Salmon Grilling on New PK 360 Grill

    We eat salmon at least once or twice a week. Skin on salmon is best in my opinion.
    Cooked indirectly on the my new PK 360 Grill.....pk360grill.com
    at about 400º to 420º.
    We have had PK grills in our family for well over 40 years. I have my Dad's old one and treasure it. Heirloom grills.
    This is a really easy way to cook salmon and it always comes out good. You can walk away and relax as it cooks. More time to lollygag.

    I'm glad to see that someone else grills in the cold, rain, or snow. Your dear ol Da would be proud.
    My wife and mother-in-law bake short bread every Christmas in the form of cookies. Some are specially made with chocolate, caramel with chopped nuts, and a pecan half on top. Theses are affectionately known as Super Dupers.

    Salmon has to be cooked and served with the skin. Being from the Pacific Northwest Salmon has always been a part of life, now you've got me thinking about a different seasoning..
    We always build a fire on the beach, find some drift wood planks, tie the salmon onto the planks and set them up vertically to the fire and baste generously with butter and beer. Fresh salmon, off the boat.
    The skin crisp with fat is a favorite part.

      Shug is easily the most consistently entertaining cat on the interwebs and the only YTer I'd ever buy a t-shirt- or two- from. Now, if we could just convince him to make a hoodie, my ensemble would truly be complete.

    I ended up getting a PK Grill 360 and this was one of the first things I've made.. delicious! Kept it simple, a basic rub and some applewood chips. A-mazing! Super tender and just the right amount of smoke, and a very forgiving meat. Also did some boneless chicken thighs and they turned out awesome as well. Next up, an overnight pork butt. Hope I can keep it 225-250 over night!

      Don't you just love it…!
      You will have to get up a few times at night and tend that thing to keep it at 225 or so. Read the instruction book that comes with it, it has some good hints for that.

    I have a buddy of mine thats endorsed by this company and he uses these grills to cook his chickens on at these BBQ competitions. He is madly in love with this Grill and has sold his green eggs

    Your father knew good equipment and had good taste. You probably know the companies history. Your Original is an “original”, its a highly sought collectible here in The Natural State nowadays. We enjoy ours immensely though it’s a 2nd generation.

    Wow Man, that 360 is sweet! I think the Portable Kitchen is a great grill, but now that I've seen your 360, I'm jealous. My old PK still has lots miles left so I'll just lust after yours. Thank you man. and Merry Christmas!

    I never heard of that grilll. It sure is a beauty. I also eat a lot of salmon but always baked it. Not anymore! Thanks for the inspiration shug. I hope you at least got the grill for free for all the eyes you put on this. I appreciate that you're not a huge product peddler even though you could be a big as KISS selling stuff.

    I had never heard of a PK. Thanks!. At first, I was going to say: too bad you didn't get a "Big Green Egg"...but that looks like an awesome grill too...and much less expensive! I also love that you were using your dad's grill up until now. 1970 doesn't sound that long ago to me, cuz I'm ancient...but now that I got out my slide rule and calculated that 1970 was 46 years ago, I'm amazed. I replace my P.O.S. grill every 5 years! You should get some money from PK, because you just made a sale.

      I have history with PKs becase of Dad. He was always humming and singing whilst cooking on it. I often use two grills for big parties so now I am well prepared. Are you getting one? You'll love it. Good investment for a Good Life.

    We've got a couple of California's best salmon streams, only a 20 minute drive away and use a grill (Weber) to fix ours, much the same way you do, Shug. I'm partial to a hickory alder wood blend with mine and use the same for smoked fish, after I've marinated fillets in Bay Seasoning or Zatarains shrimp boil. From late Summer to December we have a mix of fresh run & darker "smoker" fish. The 'fresh runs' go on the grill until they're a bit crusty ( I brush'em with salad oil, colored with red food coloring, during the process ). You eat with the eyes first, but they smell pretty good too. The older fish, or "spawners" after an overnight soak in marinade, go on the grill or in a couple portable smokers, for hours until they become almost fish jerky; equally good with craft beers. I've caught salmon right out the ocean in the morning and had'em on the grill by lunch, but the longer they're out of salt water, the more they loose table worthiness, but always good until they're not.     Shug, I just got an original Pk after seeing your videos and using my friends who's had one in his family since the 60's.
    I smoked my very first boston butt today using Bad Byron's and it fell off the bone! =D Gonna follow this salmon recipe next. Thanks for the tips, hope all is well.

    dang it.....now I have to go make some short bread.
    the last salmon I made I used some Blackening, and basted with smoked honey........mmmmm. one of the best thing about living in the PNW is the salmon. Also dont forget to try cedar plank Salmon when cooking over coals.

    Nice grill. Giving a shout out to livermush, there is no doubt that you are a Carolina boy! My dad loves livermush sandwiches. I'm partial to another Carolina favorite, grilled pimento cheese sandwiches. Peace!

    Nice grill Shug. Cant beat the old shortbread. Love making (Clootie Dumpling ) basically steam pudding over here for the festive season. Might look into a grill like that for next year. Have a good Xmas, Atb.

    Very cool, I have a ceramic egg grill, and what I love about it Vs something in aluminum, is I can stoke it to 800 degrees for those thick rib eyes. I would appreciate a larger grilling surface, it's a give and take.

    What a beauty, cream of the crop pk, didnt know you could control bbq cooking so precisely, maybe i will have another go next year, my food tends to be more like charcoal than the fuel lol

      Slow and low......low temp of 225º F (107ºC) slow meaning takes some time. Meat likes you to care about it.

    Do you presoak your cherry wood before so that it smokes more? Nice I love salmon on the grill I make a garlic butter for mine, that recipe that you have looks mighty tasty also. Always looking for new recipes and ways of cooking and grilling. Thanks!!!

    Never heard of a "PK" brand. Looks mighty fine though. Cast aluminum I would imagine? Give Alder wood a try for salmon. That's Pacific Northwest Native American style. A little garlic salt added to that... BOOM.

    I eat lot's of Salmon now and my wife says I'm a pheasant plucker. Cooked with charcoal, not propane.

    You need to soak the cherry wood in water for about an hour or longer and add it after you dump the charcoal, not at lighting. You'll get a much better flavor out of the wood.

      Yes...but I did want the heat fire of the wood due to the cold temps. It was tasty any ol' ways.

    Shug, you are dead on with the wild cherry smoke. The green stuff smells like a menstruating skunk when the saw is cutting, but let it cure well and the smoke from it smells like heaven. Even fonkier than red oak when green. BTW, I know you are the juggling, hammocking servant of the Maple King, but I'd not be offended if you made more cheffing videos.     If you were going to choose a PK grill primarily for cooking for 2 people would you purchase the new 360 or the older model? I'm inclined to go with the tried & true older model but since you have both & I value your opinion I thought I'd ask.

    I'm not too familiar with PK products, but that grill looks heavy. Is it cast Iron? I'll bet the heat retention on that is superb!

    In one of your winter hammocking get togethers, somebody made fruitcake. I've never had good fruitcake in the two times it's been offered. Tips on what makes a fruitcake delicious and or a recipe?

    I am the world's expert on charcoal grilling. First lay a FLAT bed of briquettes (never make a pyramid). Second place a paper towel soaked in vegetable oil (never use fuel) on the whole top then light. Third put the seafood on the grill after the paper burns down, 5 minutes. Briquettes will burn slowly and will smoke the seafood or meat to perfection. Seafood will take 30 minutes and meat one hour.

      Naw. Needed a good hot fire and it was 19º outside. Plus..this grill shuts down tight when I finish so I can use the coals tonight as they snuff out and can re-use.

    So after a few months of use do you feel the new 360 features and size make it a better option the the OG PK? I'm trying to determine if the additional cost is worth it. Thanks for opening my eyes to a product that will out last me and maybe my kids.
