Great video and great ribs. I've only smoked loin back ribs on the PK and have always cut the slab in half. It never occurred to me a whole trimmed spare rib rack would fit lengthwise. I think that's going to be my next cook and I'll follow your steps. Thanks for taking the time to share.

I typically don't use it. I use a digital probe so I never worry about what side its on. Low and slow isn't a whole lot different side to side anyways.
THANK YOU... I thought the same thing and I questioned if I've been cooking backwards this whole time lol. I've got my fire opposite from this vids grill but I've always had my cooks turn out perfect. I just thought you would want your probe away from the fire to get a more accurate temp. Now I'm wondering does it matter? Not that I'm switching just curious
@@steveaschell PK started in 1952 and has been made in America all the way up until around 2014-2017ish when these guys decided release their new flagship pk360 WITHOUT mentioning they outsourced it to China. I'm mentioning this on all the pk360 videos so future's buyers understand this. I'm not against Chinese products since probably 90% of everything I own is made in China. I just buy American when I can and I feel like PK cheated me and hundreds of others on the 360. When asked directly they tend to dance around the answer because they really do not want the word to get out. I grill on an original PK that was made in the US and I have a pk360.

Love my new PK360 only thing better is the all aluminum and stainless one my friend made me i wouldn't sell it for 3k it's just flawlessly designed

Try trimming the ribs after there cooked
