      This is a gentle critique.....I agree, it's annoying trying to listen to him speak with the music volume going up and down. The choice of music is blah too, it's distracting. Also, the camera focuses on him when he's putting out the ingredients and or adding them to the dish. Maybe hire a more polished film team.

    Great simple recipe - Jeremy hope You don’t mind my putting this up Keto friendly version of Your recipe. Only 11 grams of Carbs. “Footnote Keto is a diet reduced carbs to around a 20g per day”
    Ingredients
    300g sirloin steak- sliced thinly or in chunks
    100g broccoli, cut into florets (7g Carbs)
    1 inch piece of Ginger
    The Marinade
    1 tablespoon light soy sauce
    1 teaspoon sesame oil
    1 tablespoon ground almond flour
    Pinch of Swerve Sweetener
    The Sauce
    ½ cup/ 120ml of Chicken stock
    2 Tbsp Oyster sauce (4g Carbs)
    1 small dash of Dark soy
    ½ tsp Swerve Sweetener
    Pinch of salt
    Sesame oil

    I love this dish so much I could happily live on it, I sometimes add a few bamboo shoots 2 it or very thinly sliced carrots depending what I have in the fridge/cupboard. Ur sauce is the closest I have found to my favourite Chinese restaurant. Can u do ur take on another classic of chicken and mushrooms please . Thank u x

    I tried those for the first time last night, paired with the vegetable noodle stir fry. This is a winner! Made enough so I could take some more from lunch, even better the day after

    You don't need high smoking oil to saute your meat (ps smoking oil actually gives off toxic smoke) . It is all about controlling the heat.

    Did this the other night, amazing what a lovely dish for a none cook person to make im learning so much and seem to find using a wok an easy way of cooking compared to the usual frying pan. Next time i wont put salt in the sauce found it a little salty but i think that's down to experience bearing in mind ive only just started to cook at 46 lol

    Simply amazing dish! Curious, if I was to cook this with about 1kg of beef for a family, would I simply triple the quantities of every ingredient?

      Ideally you would want to do it in batches otherwise you won't achieve the intense heat that's needed.
      Also you would end up boiling your beef instead of frying as there would be too much for the pan. Hope that helps.

      Yes, but as someone else has said you'd be better off cooking it in a couple of batches to keep the heat nice and high! - Lee

    How do work out your quantities just watch beef and brocaly in oyster sauce how much stock and suger do you add to oyster sauce thanks

    Jeremy, I gotta tell you last week my wife, son and I got hit with Covid. Out of the 3 of us my wife got hit the hardest and lost her sense of taste. Yesterday she finally tested negative. Tonight I made this dish along with the veggie stir fry, and she could taste it. She said it's the best meal she's had in a long time - her taste isn't 100% back but it's restored just enough that she was able to enjoy dinner 😁

    You are a great teacher. Quick question, is it still considered a stir fry once you add in the sauce/liquid? I though stir fry’s were dry heat so that the vegies stay crisp and the meat crispy. Thanks

    Great recipe. I bumped the amount of sugar a little, added garlic, and some corn flower to the sauce. Tastes nearly identical to takeout. You should also correct your recipe as it does not call for spring onion, but the instructions mention it. Excellent as always.

    Does School of Wok have any fresh caught Oysters stir fry recipes?
    I live in PacNW, and Oysters are a common delicacy. It would be great if you had some good recipes using fresh Oysters.

      Speaking as a London fireman i can tell you they will have a smoke alarm recommended for kitchens.Therefore, it will detect heat rather than smoke whereas you would have a smoke detector in other areas of the building!

    I love your recipes. I also subscribed. Please just do us one favor? Please remove your ring when you're cooking. I don't know if you remove it and wash after each dish but it would just be easier to remove your ring before preparing any food. Don't wanna cross contaminate anything with bacteria you missed under your ring!

    You should NEVER blanch the broccoli for more than 30 seconds - Seriously, NEVER. Because it's going to get cooked again in the stir fry. I never get broccoli in a restaurant cuz it's ALWAYS overcooked. 30 Seconds!
