Awesome! The velveting of the beef was what I was missing to make the beef the same texture and tenderness as restaurant quality beef broccoli! It's so in the details! I think the 5:4 tbsp of slurry was way too much tho. I just threw the whole bowl in. I should've added it gradually...but overall a great recipe and technique. Thanks again!

Pretty much on point chinese takeout recipe. Though i never boil the vegetables for 5 minutes. I only boil for 1 minute at most. But you can do it in one pan, stir fry to get aromas out of garlic and ginger (ginger for bloating and better digestion). And then add water to the pan, and boil, and then add the sauces and flavors. The so called double black soy sauce, is most likely dark soy sauce. That's what i used anyway, and the flavor was good.

No, you don't need soybean oil. Soybean oil is pretty much a flavorless oil from my experience anyway. It doesn't impart any flavor. If you want to be extra health conscious, use olive oil. If you want to use a cheap inexpensive oil, use canola oil rather than veggie oil(my personal preference cause veggie oil has bad reputation as not that healthy). Even though, i never worked as a chef, i've been in one of these restaurants as a worker before, typically, they fry the vegetables ever so briefly, like dipping the broccoli in hot oil, to give it that shiny look, then they boil the vegetables for like 1 whole minute to clean the vegetables of all the oil, then they put it in the pan and start cooking it. they add the sauce, then the corn starch water mixture. But this method can be very OILY and disgusting at times, so i don't recommend it unless you have the professional kitchen like the restaurants have. I like to add brown sugar in my sauce, to make it taste good, i picked it up from another video.
Back in Dubai all the Chinese beef and broccoli were highly in sauce and maybe 1/10 sweet. how they make it so much sauce but in the same time not too thick and strong. perfect to pour on rice

profchaos9001 it doesn't change the taste. Use room temperature or water with liquid stock and you are done. Is the same. I watch different channel for Chinese cooking and they regularly use it. But basically there is so many variations you can do as much as you like.
