    (My Pickling Liquid)
    -2 quarts Marukan Rice Wine Vinegar unseasoned
    -kosher salt to taste
    -sugar to taste (honey is good too!)
    -tbsp Aleppo
    -tbsp black pepper
    -tbsp coriander
    -1 bay leaf
    (Conserva)
    -nice oil to cover
    -pickling liquid to taste
    -salt and pepper to taste
    -garlic
    -thyme

    Use water as well, 2 cup vinegar to 1 cup water ratio. Then water bath your Mason jar in boiling water for 14 minutes if you wanna shelf it. Wait for jar to pop and if not refrigerate and eat within the week

    for extra long term storage try boiling the jar with a loose lid or better yet try pressure cooking

    Can you turn upside down to seal if the pickling liquid is cold? I would like to maintain the crispness. Also, can you pickle the mushrooms and tomatoes without oil? Was that just for a different taste?

      I would not store them at room temperature. unless you cook the contents with in the jar in boiling water... canning. if you're not familiar with it look it up. canned goods can last a long time. now picking in the refrigerator will last about 3/5 month according to what I've heard.

      @@daltonballenger7714 Also a note: if you're gonna be canning make sure to really clean and sterilize anything you use. I'd personally recommend doing a bleach soak for a few minutes, followed by a thorough rinse and straight into a pot of clean boiling water for another several minutes (ideally with autoclave tape, it will change color once it's sterile). Combine that with the heat used to can (basically any canning method involves cooking to some degree) or the preservation environment for your choice of fermentation (be sure to either can or freeze after the fermentation is done, otherwise it'll over-ferment!) and it should keep for at least as long as it takes you to get around to eating it.

      @Ellie5621 we put pickles in the fridge to have them tasting cold n fresh even though we have jars of them in the outside storage also you read instructions on some jars saying to put them in fridge once opened

      @@acooknamedMatt then why are some jared foods pasteurized and sealed by putting them in boiling water for 10min? how do you know when that needs to be done or not? do items need to be put in vinegear or can it be just in plain veg oil? i tried preserving seafood like shrimp and calamri rings,mussels etc in oil and after a while they started extruding liquids and fermented and spoiled

      @@ARCSTREAMS it’s called google sir, use it, nothing more powerful than research. But the process you described is called canning, that is a whole other ordeal in itself.

Yay 😃also some one else asked the same question but there was no answer with cold cuc s do they seal up side down cold as well like the hot ?cold would to keep crisp as you stated . But not sure if that’s going to seal .

    How does the flavor profile change between the before and after of pickling something?
    With your pickling recipe, does it add or take something away from say the tomatoes?

      I'm not very experienced on this but something to add: tomatoes are very acidic and the more acidic foods like fruit and tomatoes are most likely fall under the canning section as do making jams&jellies, which is with heat treatment and being careful to to botch it.

      2 different methods. He is pickling which is essentially just an acidic environment to keep bacteria from forming. What you are referring to is called lacto fermentation which relies on the lactobacillus bacteria which is present on pretty much everything to convert the sugar into lactic acid which then creates the sour flavor. Lacto fermentation requires leaving the jars out for 5 days to 2-3 weeks to allow the conversion to happen. You then put these fermented pickles into the refrigerator to slow down the process. Now canning is typically done with with either salt or vinegar which requires you to essentially create a vacuum inside of your jar making it an anaerobic environment (without oxygen) which greatly lengthens the shelf life.

    I love recipes, but sometimes, those people who make recipes need to shut up. Ok, I know many things that are canned are not good they have many ingredients that are not healthy. But how in the world do they have to make products for so many people in a cheap way? And how in the world canned products have to stay long time without ingredients that they have? It is impossible. We people want cheap things, so don't claim how are made. They only things that we have to claim and I think need to be protested is for other products that are not necessary. We in germany can make some products with 4 ingredients maybe and everything is ok. But some products in the US or canada have so many dangerous and unnecessary ingredients.
