  • Yep Im making Mochi again. This time I'm going to show you how to make Mochi using a steamer! The first how to make mochi video I did I showed you how to make mochi in a microwave. I got a lot of comments from people that wanted to see how to make mochi on a stove top so here it is! I love mochi ice cream and make it a lot at home using Mochiko sweet rice flour.       If I double the recipe, would it have to steam for 40 minutes in stead of 20?

      2:10 at this point it is just 1 cup glutinous rice flour and 3/4 cup water? It turns out more like custard consistency at this point. Seems like way too much water. How did you get a dough ball?

      @@bellalaskowski9564 I just made it skipping the step for steaming. Just put the water sugar and glutinous rice flour in the saucepan and mix thoroughly, then after it's mixed put on medium heat and keep mixing till it's shinny. Less stuff to wash this way and saves time as no need to steam.

    I’ve accidentally used the recipe for the microwave one and put all those ingredients together in the streamer for this one and it ended up delicious. So if you guys want to use a steamer and have less sugar in your mochi just use the recipe from his microwave mochi video and pop that into the steamer. Except steam it for 25 minutes and every 7 minutes you have to mix it. Then you good to go😋 Also the reason you have to cook it for 25 minutes is because I didn’t preheat the pot so just don’t preheat the pot k?

    Thank you Sauce Stache for the easy to follow recipe! I was really curious to see how sweet it would turn out, and I found the level of sweetness to be just right. I do have a question. Are you sure it's 1 cup of sweet rice flour and 3/4 cup of water? When I mixed these two together the mixture came out more like a paste instead of a firmer dough ball like what I saw in the video. Did anyone else run into this? Does it make a difference? Any feedback is welcome. I will definitely be trying this recipe again!

    This was fun to make although the pans are hard to clean
    I used Anthony's brand sweet rice flour and ended up using 1.5 cups of flour to get the consistency I saw in the video.
    The dough turned out great although a little stiff so next time I think I'll use 1.25 cups of flour.

    I like to make my mochi in a saucepan. I got my original recipe from the NYT but I also found one that uses juice as the liquid and sweetener (1:1 ratio) also.

    I want to bake Mochi squares and make Mochi waffles. I can then use it as a pizza crust, put on refried beans, lettuce, tomato, olives.. or tuna in sauce, egg salad, peanut butter and jam.. Hundreds of gluten free ideas and I don't want sugar in it! Can I leave out the sugar? Do I have to cook it more in the pan a little too without the sugar? THANKS so much! I have tried many versions from the rice and the Kitchen Aid mixer the grinding the rice and water and steaming and on and on. You can buy the brown rice squares to bake in waffle iron and they are outrageously Expensive. I am using Sweet Brown Rice Flour which Eden sells as Mochi Squares to Bake. THANKS SO MUCH for an tips. Takes FOREVER to clean up after this stuff! I use a Ringer from Amazon looks like the armor knights wore hundreds of years ago!       I would recommend adding it before the steaming so the flavour and colour will be absorbed

    Mine came out cooked on the outside raw on the inside after steaming! Then in the pot it completely separated! Had to mix for a good 20 mins to save it. Managed to get it to stick together even though it's lumpy. Also that is way too much sugar, so sweet!

      So I'm sure it would still work if everything was added together, But steaming the mochi flour and water first creates a starter dough and gives something for the sugar to bind to easier.

      YES!! You can make it a little chewier by either using slightly less water and steaming long or by adding a small amount of regular rice flour to the sweet rice flour!

    I tried it once, with my Thai mochiko flour, I did half of the recipe, but somehow when I started to add sugar it didn’t mix into one shiny texture like yours, but it was lumpy :(

      Yes, rice flour and sweet rice flour are very different. Regular rice flour will not work to make mochi!

      Ok i compared with your other video (microwave version) that uses 1 cup glutinous rice flour, 1/4 cup sugar and 1 cup of water and when mixed it has this same custard consistency. Don't know how you got the dough ball in this video. Simply doesn't work.

      Nevermind, i solved the issue. Just skip the step for steaming. Put the water, sugar and glutinous rice flour in the saucepan and mix thoroughly, then after it's mixed put on medium heat and keep mixing till it's shinny and stiffens up to hold shape. Less stuff to wash this way and saves time as no need to steam. And 1 cup of sugar is too sweet for me, 1/4 cup will do.

      @@konohart4622 Yes. I made it twice with my method. My method is much quicker too, try it. It's very sticky so use corn starch or corn flour if you're in UK to dust your work surface and hands. I think it took 15 mins or less, but I didn't time it. Honestly, the steaming seems pointless since you are going to cook in saucepan anyway, and the streaming cooks unevenly if you make it into a doughball like this video suggests.       It won't be sweet... but it shouldn't change much of the recipe. You'll just have a plain rice cake

    I assume i got bamboozeled at the store. They gave me sweet rice flour (all name stuff on the pack is just symbols, cant read it) and it acts nothing like in the mochi recipes. It just bakes in a hard dry piece :'(

      I use Bob's Red Mill Sweet White Rice Flour in place of Mochiko. If you get the regular rice flour it won't stick the same way.

    Tried this twice. Didn't work for me either time even though I followed the steps. The dough turned into a sugary, clumpy mess in the end. It wasn't stretchy so you couldn't form anything with it. It would tear with the slightest pull.

    I tried this and the part when I want to mix the sugar, it cooked the fucking mochi. It now turned into a freaking fried dough. I put it on low heat. Not even on medium. Lord.

      WAYYYYYY to high of heat then... I dont know what to tell you. Sounds like you added the mochi dough into a pre heated sauce pan and the pan was too hot.. like no way it would have cooked the mochi if you were stiring in the sugar while it was heating
