Say Goodbye to Thawing: Instant Pot Soup with Frozen Chicken Thighs

  • Well my day just went pear shaped 🍐 so I made Instant Pot Soup with Frozen Chicken Thighs straight from the freezer into the Pot. I'm using the Instant Pot Duo Crisp with Ultimate Lid here, but this recipe is good for any Instant Pot with Pressure Cooker function and it's DELICIOUS. If you've never used your Instant Pot to cook chicken thighs from frozen, this is a good place to start. Just remember to break up the thighs individually (not a giant ice cube of chicken thighs) & use an Instant Read Thermometer to check the chicken is cooked through. I've added some links below with further reading on cooking safely from frozen. I hope you love this soup as much as I do. And if you make extra, it's good for freezing too.

    🍲 INGREDIENTS
    1 scant cup of pearl barley
    1 medium onion
    2 sticks of celery
    4 medium carrots
    Butternut squash (optional)
    2 large sweet potatoes
    1 tbsp olive oil
    2-3 heaped teaspoons of mustard
    2-3 teaspoons of honey
    1 dst spoon of dried thyme
    4 (frozen) chicken thighs (bone in)
    1500 mls of stock

    Wow you are very knowledgeable about this pressure cooking thing. I saw other people saying this pot took forever to preheat. No one mentioned it could be due to what they are cooking and if it's frozen lol. I just used this pot for the 1st time last night. It worked great 4 me!

    Let's say i have frozen chicken breasts but needed to thaw them quickly to be able to sear them. Would i be able to thaw in instant pot? If so, how long would you recommend for?

      So sorry but I've never tried that.The Kitchn website did a whole load of testing around defrosting and might be worth a read. If you search "We Tried 6 Methods for Defrosting Chicken" it should come up.
      Otherwise it would probably be worth trying cooking the chicken breasts in the IP and then reverse searing (browning once cooked) at the end. They need to be separate so not all jammed together and depending on size I'd try starting at adding on 3-5 minutes extra to the cooking time and definitely use an Instant Read Thermometer until you've cracked the timing.
