That's the kind of dish I make for my kids all the time, if I may give you one advice, your pan is not nearly hot enough and that's the reason why your beef started to boil.
With this quantity of food you need more heat than an average electric appliance, buy a small gas burner and you'll love it :)

For those who are on the healthy side, cornstarch is high in carbs so Heat reduction: Good ol’ evaporation will thicken anything you are trying to cook. Simmer sauces uncovered, over low/medium-low heat for a period of time and your sauce will be thicker instead of adding unnecessary calories! :)
I have many more tips but will take up too much space
I overfill the pan every time I stir fry, I know that feeling! Need to buy a bigger wok!

Omg I've tried those before my friends dad brought us to a Vietnamese restaurant and he suggested i order that.
What kind of noodles did you use? I fried egg noodles but it did not fluff up like yours.
You should use noodle that made from rice instead of wheat to achieve better result.
Does it have to be those kinds of noodles? Can we use the Vietnamese rice noodles?

I ate some very similar dish in my favourite vietnamese restaurant, but I had shrimps WITH beef in it...can I just add some to this recipe, the same way you use beef? Anyway, the dish was amazing, the flavours were delicious. Looking forward to try your recipe at home :)
Emilie Renier Sure. You can skip some and add some depending on your preference :D Beside shrimp and beef, you can also use squid. The typical dish I usually eat has squid, shrimp, beef, baby corn, bok choy. It doesnt even have bell pepper, onion or carrot :D So just go for what you like

tonight we tried fresh egg noodleand we cooked itfor 2 mins then fried it it came out ok but the dry ones you used at the start of this video swell and almost become airy like in the restraunt thats what we are after

Interestingly, in the Western country, all deep fried food is considered as unhealthy, but it seems not an issue in Aisa? as people eat these deep fried food on a regular basis but not that many overweight, such as in China we have fried dough stick as breakfast and never count calories... But I guess it maybe all down to the overall food balance. :)

Yuiolk yes, I am living in Europe now, fried chips everywhere, but people know they are not healthy and better not eat too much. Asia, at least China, not that much concern on this yet. Thanks for mention:)

this needs chicken broth before adding the slurry
You do not want to boil down your vegetables.. I feel like this episode was misleading because boiling anything for even 2 min loses about 30% of the vegetable's nutrients. I am a RD.
Also you were being a little greedy on the quantity of vegetables because your ingredients were overflowing! :/
Might I suggest that you halve your ingredients for those cooking with a small pan.(doesn't have to be a wok)
