Wonderful video! A laid-back chef who's interested in FLAVOR--what a breath of fresh air. Great teaching skills, too. Have to say something about that beautiful kitchen--it's one of the cleanest I've ever seen. Wow! I'd eat at your place anytime, and live on beans and rice in order to afford it. Elegant food.
Awesome recipe and technique. Now I know how to make the only Portuguese dish I know. However, Jasper While is one of the great chefs and seafood chefs of modern times.
No no no no no-.... Chouriço (Chorizo) is something that is already purchased industrially processed, that is, it has already been cooked. And from the way this recipe was improperly prepared, it seems that the chouriço was even more cooked, that is, it seems boiled. And it´s no supose to. And what should have happened to the chouriço was that it was slightly fried, or with a caramelized appearance, so that its texture would be suitable for the cataplana.
I gave you a like but ultimately the chouriço is unnecessary... And you can "boil" it like you would in a Caldo Verde. If anything maybe for this particular dish the Chouriço could be grilled over an open flame, like an alcohol flame and the added to the final dish which would add to the flavour profile
