Actually, I'm the next step up here in Australia from you in the USA. We try to get barn finds with good sheet metal & either take them back to a Henry original, my preferred option, or build hot rods based on fully modified full box chassis with fenders front & back. The authorities are pretty strict if building a hot rod, inspections all the way, but with a Henry original, it's all systems go without any involvement for inspections along the way. We can even leave them left hand drive for a road worthy & full registration. I love the fact your not worried about money & time while building your cars, unlike others on UA-cam.
