Beautiful knife. I like hearing the sound the knife makes as it also is helpful in gauging the performance. Definitely looks like a fun knife that can tackle most tasks with ease.
At 250mm with this amount of belly height it definitely pushes me outside of my comfort zone. Find it hard to control for precision work. Crazy that for some, 250 is on the small end of their gyuto collection. So you’re not saying necessarily you like this type of review video but you do appreciate not having any background music so you can hear the knife more.

I've seen these around and they're beautiful knives. Now I guess I have to try to get my hands on one this year! I had a chance to purchase a 200mm Gyuto but that's too small for me. Waiting for a 250!

I need a choil shot. I like the voice over, but it's a little too ASMR for my liking. I like food cutting videos, so this is great. Looks too thick at the heel as you described.

This is good. I'm on IG with handle (at)sparrowsharpening. I meant that if you were to shoot nice clips of the bevel and handle and even spine, you might as well include the choil for better visualisation, which to me (as a knife enthusiast) is important since you really can't tell until you see the knife in person and hopefully even get to use it and sharpen it before knowing exactly how the steel and knife performs fully. So every little bit of information helps.@@KitchenKnifeGuy

I like that I can hear the knife cut. The sound of the cut is important.

This style is better. ASMR can be slightly turned down but nice having no distracting background music
