The corn meal has to be cooked on the stove top with water..cooled..then it can be used for pastelles etc. The precooked cornflour like promasa etc is easier to use so is more widely known. So happy you cleared it up for users. Thank you

Yes, you have to cook the cornmeal first on the stove. You have to stir it constantly scraping the bottom of the pan so that it doesn’t stick and burn you know it’s done when you get a spoonful turn it upside down and It doesn’t fall off the spoon use water and the broth from the roast (I boil the broth down so that it’s a less amount and has more flavor )to flavor it and make it instead of just water I don’t like the MASA It tastes floury to me The thing with the corn meal is it can’t be runny and it can’t be too thick or your Tamales won’t turn out right

I tried making coconut bake with coconut flour a bit of gf flour , flax meal etc , that did'nt came out good at all, dont kno wat was that lol...Just waisted ing witch is not cheap in tnt. Please cud u do a gf coconut bake recepie and please do a gf version on ur other recepies !!! Thank You n many Blessings!

You are correct. Only this year I've notice the change of name from cornmeal to corn flour.

We make a dish called hot water cornbread. When using cornmeal you have to add boiling water to get the play dough consistency.
I'll give that a try.
I use cornmeal to make pastelles because that is what I all knew about in Trinidad and yes you gotta use hot water to form a dough.
For the corm meal you have to mix in boiling water . It holds when mixed with boiling water

For the coocoo use cornmeal promasa is corn flour... not that it can't be used it will clump up fast.

Apparently, cornflour (no space) is the same as cornstarch, but corn flour (with space) is what Promasa and Pan are.

I don't think masarepa has flour in it. It's the same product as pan. The maseca products are different as they are made from nixtamalized corn.
