  • The origins of orecchiette are remote and not very clear, but they should still be sought in the regions of Puglia and Basilicata, or more specifically in the historical area of Daunia, where, since the Middle Ages, using the durum wheat of the Tavoliere, hollowed in the center with the thumb of the hand. Later, during the era in which the Angevin dynasty reigned over the territories of the southern peninsula, this pasta shape was able to expand its production area, spreading further to the rest of the Lucanian territory.
    In the Foggia area, burnt wheat is one of the contemporary examples of food waste recovery. Burnt wheat flour is in fact a wholemeal flour obtained from the burnt wheat grains left on the ground. For decades, burnt wheat has been the symbol of peasant tradition because the landowners allowed farmers to collect the grains of wheat burned after the practice of burning the stubble which favored the recovery of the ears left on the ground and the fertilization of the land for the next harvest. . The flour obtained from the grains of burnt wheat, mixed with very little white flour, gave rise to a dark wholemeal flour with a significant bitter taste.

    and it is precisely from the union of the semolina together with 10% of this flour that today Nonna Anna and my little Anna have made the Orecchiette with burnt wheat, completing the recipe in a pan with turnip greens.
    in fact this is the dish that best represents the province of Foggia at the table.
