3:11 just an interesting thing to note, but gloom shrooms can actually attack zombies before they even enter the pool if you place them to the far right. it seems counterintuitive, but they do enough damage to regular and conehead zombies that theyll save you a little bit of damage on your pumpkins.
actually they did something good (for the zombies): If their pickaxes get stolen by the magnetshroom, they are wasting one magnet shroom as it could be getting some other zombie's more useful metal object (football zombie's hardhat, for example). If they get to the back of the lawn, cattail targets them because they are the zombies most to the left of the lawn, and therefore waste the damage that the cattails should be dealing to other zombies that shoukd be a higher priority. Pretty interesting stuff that I would have never even thought of if it wasn't for this video.

Good job man! Your strategy is pretty interesting, basing off of dealing a lot of damage. I beat the challenge 1,5 years ago myself and relied on cob cannons and ice-shrooms. I think no matter what your setup is, it's best to pick the imitator of ice-shroom. Also, would you like to try to beat level 3-2 without lily pads? I beat level 3-1 without lily pads on my second attempt. It only comes down to luck and proper performance. I'm trying that myself, but can't manage my plants enough. If you try, you will realize what I mean.
I feel like a threepeater is a good choice, to replace the double sun flowers with. It basically gives the pool 2 repeaters, and the near land 2 invisible peashooters
Honestly it probably would have been smarter to plant a sunflower first because it would be generating sun while waiting to collect more sun. What im trying to say is that by the the time you could afford the cattail the sunflower would have paid for itself and you'd already be ahead on your resource production
