Why not consider the B&W profiles when converting to b&w? They give you a choice of starting points.

Because then you don't get the b/w color sliders so you cannot alter the tones. If you choose a b/w profile you're stuck with what you see. If you like it, go for it. Just know you can't edit the tones.
