Making Strawberry Mead with a 16-Month Tasting

  • Describes the initial process of making 1 gallon of strawberry mead (melomel), and a results tasting 16-months later.
    Note: I am not a professional winemaker. I hold no responsibility if the results of your winemaking causes injury or ill health. This is as natural (where possible) winemaking channel. The wines made on this channel do not use sulfites. You may use them and\or yeast nutrients and or energizers if that is how you prefer to make your wine\mead.. This channel uses pasteurization.
    Ingredients:
    3 - 5 pounds Strawberries
    3 pounds Raw Honey
    10 cups Water
    1/2 teaspoon Wine Yeast (I'm using Red Star Premiere Classique)
    During the first 3 days give your musk a good stir, and to break up the fruit cap that will form if you are not using straining bags. After 5-7 days Rack into secondary, and continue to rack every 4-6 weeks until clear. Degas, back sweeten, bottle let age for at least 12 months total.

    Oh the color is really nice. I’m sure the taste is amazing.
    I also started a strawberry mead a while ago. It’s almost done, I back sweet it last weekend, and it is so delicious.
    I used a 9% French cider yeast. It brings out the fruit flavor so well. I also added black tea for tanin

    You aren't fooling me, you intentionally broke the cork so you'd have an excuse to drink the whole bottle! 😅

      Actually no, the broken corks are a pain to deal with. I use vacuum stoppers, to save leftovers.

    I couldn’t agree more with your statement that it’s pretty hard to mess up a mead. When I’m underwhelmed by a fruit wine I will often try to make a mead version. I do tend to like a bit of tannin, so I’ll often turn to black tea, wine tannin or oak for that… unless the fruit has a lot of seeds (blackberries, raspberries… etc) as they tend to provide a lot of that.
    Mmmm… I ‘need’ to start a strawberry mead. Thanks for reminding me. It’s been too long!

    How do you date your wines/meads? Typically I date when I bottle them, but I have several that are bulk aging (due to laziness) for 6+ months and may end up closer to a year before bottling.
