The unique sourness and milky scent from Dali, Yunnan: Rushan Cheese

What is your impression of Dali? For me, it is this intense milky scent from Rushan cheese, which cannot be produced by machines yet!
The old saying “18 Odds of Yunnan, milk in pieces for sale” refers to Rushan cheese from Dali!
It is made of fresh milk and its naturally fermented sour liquid. The proteins in milk (mostly casein) denatures and starts to form solid clumps. Use a wooden stick to mix gently and squeeze the mixture into a diary dough with hands.
Take the dairy dough out and press into round shapes. Then use two sticks and twist them into longer shapes. Pull triangles out of the edge of each end and twine the pieces around bamboo trapezoid drying shelves. Sun-dried Rushan cheese has an intense milky scent. It is so very tasty, either fried or grilled!

Not always the case (im also chinese *thai&chinese mixed to be exact*) ,
(im switching between thailand/south-china mainly all the time ,anyhow)
theres other sides to it, just like it any other country theres good&bad people.
We do not always treat eachother like you see here.
But mainly the people are nice.

Have never eaten this. However I had helped to google and hopefully can help those who want to know more about this. 乳扇(ru shan), is a type of cheese. 乳(ru) means milk and 扇 (shan) means fan, the chinese bamboo fan. It got the name because of the shape - like a fan. It is a famous snack in Dali, a city in China's Southwestern Yunnan province. With the heat (approx 70 degrees celcius) and the help of citric acid, the milk solidify very quickly and it was then hang to dry, hence here it is - "ru shan".

I love how in every video it always end with a family member eating with you. The videos always ends beautifully, family warmth and united. Even the little brother ah Hao always enjoy his food. Mozarella is an Italian soft cheese, other nations have this method too, like sulouguni in Georgia
I don’t think that’s mozzarella cheese, the method looks different from what I saw in a mozzarella cheese making video, I think that’s Chinese method which is different from the Italian one
