I usually make alittle extra clam juice/sauce, cook the pasta half way and finish cooking it in a couple of ladles of the clam juice, i like for the pasta to absorb some of the flavor of the clam juice. When the pasta is done cooking I finish the dish just lime you did. Looks amazing.

I miss the LI fish monger I used to get my shucked clams with juice from... Soooo delicious. For this preparation, my preference would be the white though I love the dollop of red that you added, soooo, when it comes time to sop up that sauce, you get the best of both. Beautiful food. 🤗👍🍝🥖🧈🍷🥗

Why put olive oil in the pasta water? I've heard that's a no no from other Italians before. I'm not Italian but am quite good at making pasta (it's not hard but it's one of passions). Any opinions on this? I don't normally put olive oil in the water but am open to change.
