Awe this reminds me of when I was a kid & Mum, Dad, & I would stay at the beach in the caravan. Dad would go out for mussels for Mum. She’d make her toroi with watercress. Chill it in the fridge. She’d wake me up in the middle of the night whispering “muff (my nic name lol) wake up, the toroi is ready”. We’d sit there together as dad slept in the quiet of the night & munch out on toroi. It tasted sooooooo good! But she never showed me her recipe & now she’s passed on. But I’ll never forget those times & that yummy taste 😍

Is this the same as Whakamara my Nanny used to make it was fermented puha with onion and mussels it used to help with my gut problems when I was small I loved it!

Ohhhh yummy. Have a try with mutton bird juice. If you have had mutton bird boil up with puha use some of the puha and mutton bird juice from the mutton bird boil up add it to your mussels. It's really really delicious. My favourite way to eat toroi.

I know, I should have put some onions in it for sure. I love my onions with puha. Was great chilled but a lot of the liquid got absorbed, might have to save some to add later.
That toroi looks great! I am in Canada. Our milk thistle season is over now, so I can't forage our version of puha. (And it is not in our stores.) I read that it tastes like chard. Would that be a good substitution?
My sister makes a great toroi, will def change the recipe next time. I haven't had mutton birds in years. I would like to try the fresh stuff not really the salted.

My old man used onion with vinegar then would pickle it for a couple of weeks, Man was it delish.

It's the same, my Kuia makes it. we call it whakamara or toroi.

Chard would work better than watercress I think. Another alternative would be spinach, has a good leaf to stalk ratio like puha. Happy foraging!

I don't think so, toroi needs a bit of bitterness from the puha, but i could be wrong.
