One Pot Hainanese Chicken Rice | 海南鸡饭 | 海南雞飯

  • This video recipe will show you how to cook the perfect one pot hainanese chicken rice (海南鸡饭) that is so authentic it will taste just like the one from your favourite singapore hawker stall. Hainan chicken is typically made by poaching a whole chicken so that the meat is still juicy, moist, and succulent, and then using the stock to cook and flavour the rice. This one pot recipe to make hainanese chicken rice makes it a very simple process and is ready in 45 minutes. There is hardly any preparation required and it also allows you to make a smaller portion which is perfect for a single meal. As you will see, the chicken is still just a juicy and just and succulent as if you were transported to the streets of singapore or malaysia.

    The full recipe is below

    2 pieces chicken leg (~750g)
    2 tsp grated garlic
    1 tbs grated ginger
    1 tsp salt
    2 stalk spring onion, cut 10cm
    1½ cup (or 2 rice cup) jasmine rice, wash 3-4 times
    400ml water
    1 tsp sesame oil
    Vegetable oil
    In a pot, fry ginger and garlic in a small amount of vegetable oil on medium heat for 1-2 mins.
    Add spring onion and salt and fry for another 1-2 mins.
    Add rice and stir until rice is well coated with the oil and aromats are well combined.
    Add water and mix until well combined.
    Place chicken leg pieces in the pot and try to submerge into the water as much as possible.
    Reduce heat to low and cook covered for 25 mins until rice is cooked and fluffy.
    Turn off heat and leave covered for another 10 mins to steam.
    Remove spring onion and chicken from the pot and fluff the rice.
    Allow the chicken to cool slightly for 2-3 mins before removing the bone and slicing.
    Assemble rice and chicken on a plate.
    Drizzle some sesame oil on top the chicken and serve immediately.
    Optional - garnish with coriander and cucumber and serve with chicken rice chilli sauce, ginger scallion sauce, and light soy sauce.
