  • This video is less of how-to make sourdough, (you can find plenty of those here on UA-cam), but more showing how I tried using all corn juice/milk in-place of water.
    Formula:
    100% Flour (90% KA Bread / 10% Red Fife)
    2.2% Salt
    20% Levain
    72% Hydration
    4 Hour Proof
    18 Hour Retard
    20min Bake Covered at 475ºF
    25min bake uncovered 425ºF
