This is just what I needed today. I was thinking about my Mom and her blueberry cobbler just yesterday. I found a great easy recipe for a rustic crusty bread that we have enjoyed . I have used different kinds of flour and combinations and all have turned out amazing. It only has 4 ingredients: 3 cups flour, 1 tsp salt (I use either kosher or corse sea salt.), 1/4 tsp yeast (I add extra when using gluten free flour or oat flour), 1 1/2 cups hot water. This is a extremely easy no knead bread. I mix the dry ingredients in a large container or bowl that has a lid. Stir the ingredients to aerate them, but don’t sift them. There are 2 methods of doing the next steps. You can use hot water (120-125 degrees Fahrenheit) to mix and let rest covered for 3 hours or use cool/room temperature water and let it rest for 8+ hours or overnight. I have mixed it early in the morning and left it to rest and rise until 3-4 pm before starting our dinner preparation and the extra time only made it better. I started using a covered plastic container because our plastic wrap was terrible and didn’t stick to the bowl. This is a moist dough which is why it forms a nice crunchy crust while baking. After resting put 2-3 tablespoons of flour on a counter or work surface and scrape the dough out onto the flour. I have been using oat flour for this part because it adds a nice flavor and texture to the bread. Using a scraper fold the dough 10-12 times. Wipe the container out and line it with parchment paper with enough on the length to be able to pick it up and transfer it to the pot/Dutch oven. I sprinkle a bit of the corse salt on the paper before setting the dough on it. Form a ball with the dough and place it on the paper. I sprinkle a bit of salt on top only a small amount is needed and you can use seeds and other herbs if you want. Cover and let rest. Take an ovenproof pot with a lid or a Dutch oven and place it in a cold oven and preheat oven to 450 degrees Fahrenheit. Once it reaches the proper temperature remove the lid using oven mits . Pick up the dough out of the container by grasping the ends of the parchment paper and place it in the Dutch oven/pot and cover with the lid. Bake for 30 minutes. Remove the lid and carefully remove the parchment paper leaving the bread in the pot and bake for an additional 10-15 minutes. You want it to be golden brown not burnt. Every oven is different and an oven thermometer is helpful. For my oven I have learned to reduce the temperature to 350-375 degrees Fahrenheit and bake for 5-10 minutes before turning off the oven and letting the residual heat finish baking it. The last 10-15 minutes baking without the lid is what makes the crust become crispy/crunchy. Let it cool a minimum of 15 minutes before slicing it. I put it on a cooling rack covered with a cotton towel. I have started using an electric knife to slice it because a regular bread knife was catching on the crust and ripping it. Since I had an electric knife that I rarely use I decided to give it a try and was pleasantly surprised by how well it did. This bread is amazing plain, hot with butter, toasted with butter or cream cheese or jam or anything else you want to try. I have been making homemade soup, stews, and a variety of other meals and the bread has been a perfect complement to them. I have severe allergies and have to be extremely careful about what I use when cooking and I have been pleasantly surprised because I haven’t had a reaction to gluten when eating this bread. I don’t know if it’s because I am only using non processed ingredients and no GMOS, but I am thrilled. Normally eating anything with wheat, grains or corn and gluten would cause severe inflammation in my body, horrible gut pain and intestinal issues and other severe allergic reactions and I haven’t had that since I started making this bread as a posed to when I have eaten store bought bread or anything with those ingredients. So far I have only done a mixture of gluten free flour and all purpose flour with a bit of gluten free oat flour because it can make the dough more dense and chewy inside.
Turned out I had everything to make this recipe in the house so I made it. Mine turned out just like Lance's and oh boy was it a delicious dessert. I don't really like cobblers in most cases, but this one was super easy, simple and did not disappoint. Thanks, guys!

I made this for the small group of friends with whom I am self quarantined and we all loved it. I am a Texan myself and this reminds me of my great Aunt Bessie's peach cobbler. She would make this with fresh peaches and we would make ice cream on their back porch with one of the old crank ice cream makers to go with it fresh out of the oven.

Raised Stateside and in the south, this is the identical cobbler recipe my mother and grandmother served throughout the summer. You can use any fruit, (apple, blueberries, blackberries), but it's easier, saves a step and better if you melt the butter in the pan as you're preheating the oven, then pour the batter mixture and fruit into the hot pan and and return to the oven. That way you get all that wonderful browness around the edges and Lance is right, it's great with Ice cream or just sweeten cream. Leftovers are great for brekkie with a cup of coffee.

You want one of my recipes? Seriously? Alright - this is one I call Splodge Loaf. You need: 4 eggs, 1 tin baked beans, 1 tin new potatoes. You might also want: Mushrooms, Sausage, Bacon... anything else like that, really. Step 1: If you're using meat, grill it first, trying to time it with the rest of the process if you can. Step 2: Cook the potatoes in fresh water, not the brine they're in. When they're ready,drain the excess water, add the beans and stir them in until they are cooking nicely too. Step 3: Now add the cooked meats, mushrooms and whatever else you want into the same pan. Step 4: Finally, add the eggs, and start stirring like crazy until it's all solidified into the eponymous loaf. Step 5: Splodge the whole lot onto a serving plate, cut wedges out of it for each person, and enjoy. (You might want to put some kind of sauce or ketchup on it too).

Lance, you are right about the virus, it has to be taken seriously, first for ourselves and then for everybody else. It is true that if we were not quarantined, we would not try and do things that normally other people do for us. My husband I and I made corn cakes, which we normally eat for breakfast. I just found this.....Lance is so right. Old family recipes are a way of connecting with our ones no longer with us I'm a member of Pioneer Settlers on both my parents side of the family. And family gatherings were only done with kitchen duty shared around. So I learned all the family recipes in my hesd.... During lockdown I poured out my brain into pdf files. I have over 50 recipes stored away. My late mothers Wine Steamed BBQ chicken was iconic in the Dry Creek Valley. Every Saturday 80 quarters of chicken hit the grill followed later by a steam in white wine covered by her special sauce. Always served with her spaghetti. 20# .... Tha, along with several dozen recipes, are now permanently protected in pdfs. I'm going to add your peach cobbler. It is almost a exact copy. Except Grandma covered the 'dumplings with a heavy dose of cinnamon before the peaches went in. I’m from the south and peach cobbler is something treasured. Every mom and grandma seems to have a different recipe or method. I tried this recipe and it was better than mine and my mother’s!! We usually pour the flour mixture(crust)on top of the syrupy peaches and butter instead of ladling it in the butter first. . Let me tell you, your method makes a better cobbler!! The Lemon juice adds brightness to it. It was so darn good!! Thanks for the recipe guys! Much love to you and yours.

I've been trying different recipes for years now trying to get close to the ones we would make when I was in girl scouts way back when, but nothing was close. Lance, you are right about the virus, it has to be taken seriously, first for ourselves and then for everybody else. It is true that if we were not quarantined, we would not try and do things that normally other people do for us. My husband I and I made corn cakes, which we normally eat for breakfast. We have been cooking and cleaning the house, and also teleworking. Hopefully this crisis will end and we will regain certain normality in our lives. Happy birthday to Nana and blessings to Robbie.

My late mothers Wine Steamed BBQ chicken was iconic in the Dry Creek Valley. Every Saturday 80 quarters of chicken hit the grill followed later by a steam in white wine covered by her special sauce.

I'm going to add your peach cobbler. It is almost a exact copy. Except Grandma covered the 'dumplings with a heavy dose of cinnamon before the peaches went in.

I’m from the south and peach cobbler is something treasured. Every mom and grandma seems to have a different recipe or method. I tried this recipe and it was better than mine and my mother’s!! We usually pour the flour mixture(crust)on top of the syrupy peaches and butter instead of ladling it in the butter first. . Let me tell you, your method makes a better cobbler!! The Lemon juice adds brightness to it. It was so darn good!! Thanks for the recipe guys! Much love to you and yours.
