Bravo! Well done. As a child we raised 10,000 White New Zealand rabbits. My mom would tell me to get 3 rabbits for dinner. Now I’m 64 and not as strong, but I definitely wanted to raise rabbits again. This really helped me bc it was my mom that cut the rabbit. The way you do it is amazing.

My husband Brian and I just got our first rabbits. We are starting with 2 does and one buck. We built a beautiful rabbit hutch using the cage hanging technique that Sarah and Kevin used. Im glad we did it that way, i feel our rabbits are well protected. Brian and I are 3rd year homesteaders. And these videos feom Living Traditions are helping us along SO well. Brian and I have never lived on a farm so this is all new to us. We have spent 3 years researching rabbits. I was very leary about disbatching rabbits and gutting and processing them. These videos have made me very confidant to not only disbatch but to butcher one as well. We'll have our first rabbits in the fall, Im so excited to do this. You guys are the best. Cooked my first rabbit whole then deboned it for making a soup. Was a bit puzzled about it's anatomy - the meat which looked like a chicken breast was on its back! :). This video helped to understand better where the meat is on a rabbit - will cut it next time as you showed. Thank you.
I am a vegetarian, and have been for years, but this family raises their meat in great quality, very informative, great job! I wont be doing this any time soon, but keep up the good job, these animals are much more humane and happy then most meat animals.
my wife and i processed our first Rabbit and put it in the fridge a couple days as you said we roasted it up and had the best supper ever on the third night, while we were home and the kids were all out for the night, or so we thought. our daughter came in late while we were asleep and she eat up the left overs from the fridge - next morning she goes on and on about the 'best roast chicken ever mom!!" - the Rabbit was a success! Thank u Sarah, I would never have believed how simple that was to cut up without seeing it! The cracking of bones did not bother me, it would have a few years ago, but I’ve watched videos, visualized myself doing them, conditioning my mind. As the saying goes “mind over matter” that saying is sooo true, I used to be sooo squeamish, I couldn’t gut a fish, I can now. I saw the video where Kevin processed the rabbit, seeing that done n the past gross me out, now it doesn’t. Ur girls r fortunate to have y’all as parents, u both r great at teaching! it's easier than you think so don't be intimidated, that's what i thought too that it would be hard but it's way way easier than boning a chicken or turkey with this tutorial it is a breeze. AND it's delicious and you get to enjoy the fruits of your labor! I realize your post is ancient but i just wanted to give you a little bit of encouragement. Best.

Those of us who love animals WANT to raise them ourselves so we know their lives have been great, we know what they have eaten and we can take full responsibility for what we are eating. It's very easy to rely on prepackaged meals (where you don't know what chemicals have been used to raise your fruits, veg, meats), it's very hard to raise your own but very much worth it for your body and the planet. Please understand that people who raise their foods (fruit, veg,meat) are often kind, considerate people who know that growing local, organic is sustainable...as for me and my household....😉
I grew up with homestead farming in the 70's/80's. we had all kinds of animals at home for their meat and a number of laying hens, we also had a large vegetable garden. and the slaughter of animals has been spoon-fed to me. later i became a butcher and now at 51 years old i went back to my roods where i now have a small homestead farm with cows/chicken/goats/horses/pigs/turkeys/rabbits/ducks/pigeons and of course a large greenhouse for vegetables and potatoes, but I also turned an old stone stable into a farm shop. and I like this life better than the hustle and bustle in the city.

Great video. Rabbit is probably my favourite and what I order when on the menu at a restaurant, but I like even more cooking at home. I butcher exactly as you do other than taking the filets out. Then I cook the rabbit three different ways. Filets I sear in butter (of course) and serve with cream sauce, mushroom/cognac being my favourite. Legs I confit (poach in oil) and sometime sear in butter at the end and then serve with lentils and carrots. The rest of the carcass I poach in stock, peel off all of the meat and then use a plating form to make pretty. Love your channel.
Great video! I just dispatched and cleaned 11 NZ’s , my 1st litter. It took much longer than the 2-3 min per rabbit vids I watched but it’s done ! Was searching for package and freeze portions and have to say not only did you make it look easy but did your easy to understand pleasant way made vid enjoyable! I watched this video a few months ago and today, we are doing our first rabbit butcher on 20 rabbits. My husband has a friend who is coming to show him how to do the slaughter and I will be in the kitchen prepping the rabbits for the freezer. I told my husband, "no problem"! I watched Living Traditions and I can do this! We have butchered chickens several times and will again and this cutting seems easier to me than my chicken cutting when they are fresh. I just hope I have a sharp knife! :D Thank you for posting this video. I wouldn't have known what to do.
I just purchased 2 rabbits from a family farmer, but I had no idea how to break it down. I just didn't realize how simple it was. Thank you for this informative video, I will be joining you for more ideas. Gerry Sheffield
4 years after this video played, but here are a couple thoughts I use that work. First, one usually processes several rabbits at a time, so if you remove the flank meat (I think Sarah calls it a flap), toss all of them in your grinder & you have meat for tasty bunny burgers. Second, when you freeze them, package all the front legs together, all the back legs together. The front legs are much smaller & thinner & if baked or BBQ'd with the back legs, they'll be overcooked by the time the back legs are cooked. The saddles (backs, or loins) are the meatiest parts & are packaged with other saddles. The UA-cam cite "The Scot Rea Project" has the recipe, Lapin ala Mutard (rabbit in mustard), and the technique. After eating rabbit for years, this recipe is the reason God put rabbits on the planet. You've GOT to try this!
My mom used to occasionally buy rabbit from a high school teacher who raised them. I loved eating fried rabbit, just like fried chicken. Loving your channel. I purchased your cookbook so I came on here to find a how to cut up a rabbit video. I’m so happy to find this. We’re having fried rabbit for dinner tomorrow and since my mom passed last year I needed to learn how to cut up a whole rabbit. She showed me twice in the past 15 years but it’s been a while. She made more pieces than you do but I’m sure once I start cutting I’ll figure it out. I’m also looking forward to making some of your recipes.
Sarah, this was a very clear and easy to follow vid. Thank you. All the butchers I go to now only carry frozen rabbits so they won’t cut them for me. Hence I’m digging around to figure out how to do myself. The only part I was stuck on was cutting the...I think it was the loin...in half. Wasn’t sure if it should be long ways or across....different videos have different ways. Ended up cross ways. I found the rabbit butchery even easier than cutting up a whole chicken. Go figure
Our rabbits are on their way to freezer camp as we speak and I came here for a refresher course while I put our youngest down for a nap. I know hubs is fixing to bring in a platter full of them. Lol Thanks so much for this video!

I have watched a ton of videos, and butchered about 10 rabbits...they all looked I had used a weed-eater instead of a knife LOL! However, your video made all the tumbles click! That was the best video I’ve seen, and the easiest butchering session I‘ve done yet as a result. The process was fast, clean and simple, and the results beautiful...Thank YOU!

I discovered there is a tender on the piece you use for stock. I use the belly flaps, cut into 3 or 4 pieces, and the tenders to make rabbit nuggets. Soak the pieces in salt water for 30 minutes, coat with tapioca starch, and deep fry in bacon grease. Yum!!
Sara, Just like a chicken, rabbits have an "oyster" between the upper thigh area and the tenderloin on the back that you are missing in your butchering technique. If you are processing a lot of rabbits, you'll end up with a lot of rabbit nuggets.

Thank you for all your videos! We are gonna be moving to our retirement property and the goal is to live as much off our land as possible. We will raise rabbits for meat, meat chickens, laying hens, grab a wild hog and hopefully snag a deer or two during season...we also plan to get a couple of heifers and breed as well for beef...I have enjoyed so much watching all the great videos and thank you for the great information!
Do you ever just cook all the meat off the bones then shred the meat for another recipe? If so, is their a video of that? Thanks!! I love watching what you are doing on your homestead!
We do. It is super easy. I use my Instant Pot. 30 minutes and then just pull the meat from the bone. Then I either chop it or shred it depending on what I’m making.
Ah! I just processed our first rabbit! It was emotionally difficult :( Especially cutting off the head. I'm making the hubs do that in the future. This rabbit was an older male stray that we acquired when we purchased a pre-built hutch from the classifieds. The previous owners found it and kept it. We have another buck, so didn't need 2. Because he was older, I used him as practice and gave it's meat to our puppy It's amazing how he munched through those bones! So nutritious. I'm so excited to be able to give him fresh, home-grown meat. He can have all the scraps when we start breeding and processing. I think our first mating was successful (We'll see in a few weeks). Thank you for all your help. I will be watching this video again!!
Just be careful of giving cooked bones, they are more prone to shattering and can hurt the dog. If you plan on giving bones I recommend a quick little blaze on the grill to heat it up but not cook it, or let it sit somewhere safe and dehydrate and dry (or throw into the dehydrator to be quicker and more secure).
I must admit i was a bit hesitant approaching this as my last and only try was disastrous. this was actually very informative and easy. Thank you so much. so on the last piece do you just cut it cross wise with a meat cleaver or butcher knife?
My hubby's from Malta and Rabbit is their national dish. They fry it, make Rabbit speg, stews and pies. Rabbit in the grocery store here in the states is 12.99 pd. It is delish fr. ied in a little oil (no breading) with alot of garlic and a side of English oven fried potatoes. So Yummy. You can take all the stuff you were going to put in a broth in a speg sauce slow cook until it fall off the bone and like in Malta, be sure to pic out the bones before serving over speghetti
Great vid! Very informative. I don’t raise meat rabbits myself but I love rabbit meat and often buy whole frozen rabbits from my local grocery store for roasts. I’ve never known how to break them down for stew or other dishes but now I’m fairly confident I’ll be able to give it a try!
Thank you for a good video. I know that crock pots aren't a big part of the whole "prepper" and "sustainability" movement, but if I could find my crock pot, I'd love to do a rabbit this way and cook it in the crock pot.
Crockpots are actually very great utensils to have. Especially if your lifestyle is busy with work, chores or activities. You set it and forget basically. Freeing up your time and hands for other things that need your attention. They're a great investment with many uses and possibilities. I hope you'll rethink them and electric roasters for the same reasons.

My mom used to occasionally buy rabbit from a high school teacher who raised them. I loved eating fried rabbit, just like fried chicken. Loving your channel. We’ve planted 80 fruit trees and getting our 20 grow boxes going strong. Chickens and rabbits this summer.

I purchased your cookbook so I came on here to find a how to cut up a rabbit video. I’m so happy to find this. We’re having fried rabbit for dinner tomorrow and since my mom passed last year I needed to learn how to cut up a whole rabbit. She showed me twice in the past 15 years but it’s been a while. She made more pieces than you do but I’m sure once I start cutting I’ll figure it out. I’m also looking forward to making some of your recipes.
Sarah, this was a very clear and easy to follow vid. Thank you. All the butchers I go to now only carry frozen rabbits so they won’t cut them for me. Hence I’m digging around to figure out how to do myself. The only part I was stuck on was cutting the...I think it was the loin...in half. Wasn’t sure if it should be long ways or across....different videos have different ways. Ended up cross ways. I found the rabbit butchery even easier than cutting up a whole chicken. Go figure
Our rabbits are on their way to freezer camp as we speak and I came here for a refresher course while I put our youngest down for a nap. I know hubs is fixing to bring in a platter full of them. Lol Thanks so much for this video!

I have watched a ton of videos, and butchered about 10 rabbits...they all looked I had used a weed-eater instead of a knife LOL! However, your video made all the tumbles click! I hope everyone uses the belly flaps !!! we used to call them "rabbit bacon". They fry up nicely in a little oil and taste great !!

Thank you so much for this video. I have watched two videos about dispatching rabbits and now I have learned the next step.
I discovered there is a tender on the piece you use for stock. I use the belly flaps, cut into 3 or 4 pieces, and the tenders to make rabbit nuggets. Soak the pieces in salt water for 30 minutes, coat with tapioca starch, and deep fry in bacon grease. Yum!!

Sara, Just like a chicken, rabbits have an "oyster" between the upper thigh area and the tenderloin on the back that you are missing in your butchering technique. If you are processing a lot of rabbits, you'll end up with a lot of rabbit nuggets.

Thank you for all your videos! We are gonna be moving to our retirement property and the goal is to live as much off our land as possible. We will raise rabbits for meat, meat chickens, laying hens, grab a wild hog and hopefully snag a deer or two during season...we also plan to get a couple of heifers and breed as well for beef...I have enjoyed so much watching all the great videos and thank you for the great information!

Do you ever just cook all the meat off the bones then shred the meat for another recipe? If so, is their a video of that? Thanks!! I love watching what you are doing on your homestead!
I have a friend whose mom made rabbit tacos with shredded rabbit meat.
We do. It is super easy. I use my Instant Pot. 30 minutes and then just pull the meat from the bone. Then I either chop it or shred it depending on what I’m making.

Ah! I just processed our first rabbit! It was emotionally difficult :( Especially cutting off the head. I'm making the hubs do that in the future. This rabbit was an older male stray that we acquired when we purchased a pre-built hutch from the classifieds. The previous owners found it and kept it. We have another buck, so didn't need 2. Because he was older, I used him as practice and gave it's meat to our puppy It's amazing how he munched through those bones! So nutritious. I'm so excited to be able to give him fresh, home-grown meat. He can have all the scraps when we start breeding and processing. I think our first mating was successful (We'll see in a few weeks). Thank you for all your help. I will be watching this video again!!
Just be careful of giving cooked bones, they are more prone to shattering and can hurt the dog. If you plan on giving bones I recommend a quick little blaze on the grill to heat it up but not cook it, or let it sit somewhere safe and dehydrate and dry (or throw into the dehydrator to be quicker and more secure).

My hubby's from Malta and Rabbit is their national dish. They fry it, make Rabbit speg, stews and pies. Rabbit in the grocery store here in the states is 12.99 pd. It is delish fr. ied in a little oil (no breading) with alot of garlic and a side of English oven fried potatoes. So Yummy. You can take all the stuff you were going to put in a broth in a speg sauce slow cook until it fall off the bone and like in Malta, be sure to pic out the bones before serving over speghetti
Great vid! Very informative. I don’t raise meat rabbits myself but I love rabbit meat and often buy whole frozen rabbits from my local grocery store for roasts. I’ve never known how to break them down for stew or other dishes but now I’m fairly confident I’ll be able to give it a try!
Thank you for a good video. I know that crock pots aren't a big part of the whole "prepper" and "sustainability" movement, but if I could find my crock pot, I'd love to do a rabbit this way and cook it in the crock pot.
Crockpots are actually very great utensils to have. Especially if your lifestyle is busy with work, chores or activities. You set it and forget basically. Freeing up your time and hands for other things that need your attention. They're a great investment with many uses and possibilities. I hope you'll rethink them and electric roasters for the same reasons.
