I love the emphasis she had on not wanting to cook even a small meal for one due to the amount of work getting everything out and cleaning up after. Sometimes I only have enough spoons to make dinner or take a shower. So I get takeout and make sure I'm clean.

I'm blessed by your explanation of why certain dairy products don't bother me and others have me literally dying. I appreciate that so much so now I know what to look for and can stop excluding things out of fear. I just figured I had gotten lucky that day or something when no reaction occured, so this makes so much sense and will allow me to broaden my diet back up a bit.

Suggestion: burrata and smoked salmon 🫣
I had an amazing burrata and salmon salad when I was in Spain - rocket (arugula? not sure what americans call it), smoked salmon, burrata, sliced almonds, passion fruit vinaigrette.
When I make it myself, for the vinaigrette i just use passion fruit curd and mix it with balsamic vinegar. Though I’m sure actual passion fruit seeds would work, or just the balsamic vinegar by itself.

Hi Abbey! Many influencers and creators have said that they can digest lactose in Europe, but in the US they're lactose intolerant. Could you make a video/tik tok on why this could be? Just wondering if it's really lactose intolerance or something else in the US dairy?

      That's a great question!

The breed of cow in use by various commercial dairies in the US and Europe could be a factor. Holstein cows produce A1 protein milk, while breeds such as Jerseys and Guernseys produce A2 protein milk - the latter being more easily tolerated by those who are lactose intolerant. While Holstein cows are used in the dairy industry worldwide, they comprise about 90% of the US dairy livestock - whereas nations in Europe might have dairy industries that use a more balanced blend of cow breeds depending on factors such as farm acreage size, end product the milk will be used for, regional and cultural preferences, etc.
The type of protein isn’t the only difference in milk composition between these breeds - Jersey milk has a higher fat content than Holstein milk, and Guernsey milk has a higher fat content than both… there are also some differences in trace minerals, etc. Some of this breed-specific, even when various farming practices are taken into account.
Dairy science is legit pretty fascinating. 😊

probably like 6 months ago, I started having either some greek yogurt with protein powder (and a sprinkle of mini chips) or some cottage cheese with fresh fruit mixed in before bed. I found I slept better and I did not wake up starving or in a bad mood because I was hangry. I also saw better fasting numbers so it seemed like a win all the way around.

Fairlife milk also has twice the protein of regular milk and is lactose-free, so a cup of that instead of Greek yogurt on a serving of cereal that has 5 grams of protein brings it up to 20g protein.

I wonder though if she meant Lactaid brand's lactose free products instead of the pill. Even though other brands now make lactose-free milk variations too, Lactaid was the first brand in the USA that changed my life. I could have cereal, homemade desserts, creamy pasta/soups at home by substituting regular milk/cream with lactose free milk after 20 years. Lactaid also has a lactose-free cottage cheese that's amazing to have as an option, and as far as I know, the only brand currently that does it. Because it is still the most readily available national brand to introduce lactose-free products on the market, I think Katherine is referring to those, and not the pill. She says, "I use" and not "I take"?

I’m the same when it comes to dairy - can’t do milk, ice cream (but can do gelato) and soft cheese but everything else is fine. I did the lactose test and I was borderline - so I have sensitivity but not full intolerance. It also doesn’t help that I have autoimmune issues (Hashimoto’s and Sjogrens). Luckily we have lactose free milk in Australia.

Fresh from her in-frickin-credible Super Bowl performance could you try and track down what she eats. Could be an interesting couple videos. 💗

Omg when she said Tabasco with her eggs I had like hardcore nostalgia bc when I was a kid my dad used to always keep a bottle of it on the table during breakfast so we could put it on our scrapple and eggs and that shit is SO good. Man I haven’t had it in forever. I need to buy a bottle bc it’s one of the few hot sauces I actually enjoy.
Also eating multiple bowls of mini wheats in one day is also like so relatable 😂 I used to eat it with milk and now I love just snacking on dry cereal while I’m baking or watching tv or whatever (younger me would cringe if She heard me say that😂) I feel like me and kath Heigl like the exact same foods bc sushi is also my fav food as well lol. I use my crock pot and insta pot all the time to make dinner for me and my mom. Within the last 2 days I made both apple sauce and apple core cider in my crock pot. The only difference is all the meat bc I RARELY eat meat like usually only if I’m at someone’s house for dinner to am out. Her dinner stuff sounds like what my mom loves and used to make all the time when I was younger. Now she eats mostly plant based as well since I pretty much do all the cooking for both of us.
I’m lactose intolerant too and have been diagnosed since I was a baby bc I was breaking out with rashes all over my face and getting super sick from cows milk formula so my mom took me the doctor and they put me on soy formula. I LOVE ice cream too it’s prob my fav dessert thing to eat besides my scratch cakes but now a days I make it myself bc as much as I love so delicious and other vegan ice cream brands it’s like freaking $10 for 4 ice cream bars lmao.

Since catching Covid late last year, my sense of smell, taste, and appetite come and go in these awful swings. The taste of familiar foods will change to something extremely unpleasant, as does the smell. That’s if I have an appetite at all. Right now, my go-to breakfast is a packet of ramen. It’s the only thing my stomach will tolerate. I add tons more water, a hearty spoonful of sriracha, a generous palm of spinach, and an egg or two. I try to bump up the satiety factor, always remembering your HCC. If the only thing my body will let me eat in the morning is ramen, I do my best to make it last longer for me. It’s been great! So far, the sense of taste/smell hasn’t taken that away from me.

I’d be curious as well. I love built bars, but don’t eat them on a regular basis. Mostly as an emergency quick snack or when I’m craving sugar and/or chocolate, I’d rather eat a built bar then binge on candy bars so honestly, the ingredients don’t really matter as much at that point 😂

@@sabrinaavolio4952 I'd say they are def less ingredients than in regular protein bars and that they are really not that bad. Basically just protein, artificial sweetners, and a few ingredients to help it maintain its shape (such as gelatin) and a few preservatives (such as maltodextrin). P.S. I was looking at the double chocolate one.

Something interesting I’ve found with me drinking milk-I have been intermittent fasting for about 2 weeks, well I don’t eat anything until about 11. Before i did the fasting thing I would have sugar and milk in my coffee, but now I drink it black. Well….I’m so freaking constipated!! I have been eating so many berries, fruit, nuts, leafy greens-just a good high fiber diet with of course protein and I’m so constipated!! I couldn’t figure it out! Well, then on the weekends I let myself have a sugar free and milked coffee and I am so regular and my tummy issues are gone!! If I put that splash of milk in my coffee, my constipation in magically cured! I never drink milk unless it’s in my coffee, I just don’t like it. So I guess my tummy is sensitive to milk but in a good way😂

I lost weight and I told my father in law I did! I lost like 15 pounds. I told him I lost it and did so whilst eating carbs and that carbs aren’t the culprit. He shot his head up and said “well…what is the culprit?!” I said “having 4 kids….that’s my culprit.” I’m weighing what I weigh before kids with carbs in my diet. The look on his face was priceless.
