Anyone who wants a fun thing to do with leftover cheesy grits: Let then cool off in a flattish rectangle container overnight. Cut it into strips/squares and fry it in butter + bacon grease til crispy.

Underrated tip 👌 you can do something similar with mashed potatoes by adding egg and a little bit of flour to make them almost into mashed-potato-latkes.

Your shrimp and grits is almost the same recipe that my grandmother made and now I make. Only differences are that we use celery too in the veg, not scallions, (going to try your idea though, sounds awesome) and everything gets mixed in together instead of layered on the plate. You have my southern seal of approval!
We also use celery instead of scallions, but we do layer ours. It is amazing and now i want a big bowl. You did well Mr. Rea!!

What is grits? I have never heard of it.
@@Direblade11 Similar to porridge or oatmeal, only it's made from corn meal. Basically the same as polenta, though polenta is usually yellow corn while grits is made from white corn. It's a common breakfast food in the southern part of the United States.

The grits need salt and pepper, and I'd probably start salting them before they've finished cooking (kind of like when cooking rice or pasta in salty water. The shrimp and grits, on the other hand, look fantastic. Shrimp and Grits has plenty of room for variation and improvisation, so as long as you aren't using instant grits, you're fine.

Ok, as someone from the south I have to say, you have to add salt to the water before you add the grits, then add more to taste at the end. It needs to absorb into the grits. I approve of your shrimp and grits, milk and chicken stock is how I make dinner grits. I don’t add cheese but that’s just personal preference. And I sauté the shrimp in butter. Like, a lot of butter.
Yep. Proper Southern grits should make your cholesterol spike just by looking at them.
I like to toss my over easy eggs right on top of the grits and mix them in with cheese, jalapeños, and either freshly cooked and crumbled bacon or premade bacon bits, depending on how much time I have to put into the dish.
A couple dashes of Tabasco, Crystal, or Louisiana hot sauce on top.

I'm from Louisiana, and I agree with this. I personally don't mind the cheese grits, however I would mix mine more thoroughly to get even distribution of the cheese.

Yeah, I can't say that's what I imagined whenever I heard someone mention grits. I'd be curious to compare it to the regular oat porridge I make for myself.
@@MrJakewray It looks gross but tastes... plain. It's a type of porridge. Unlike oatmeal though, they're better savory. To try them out, make them like babish did for the first attempt. They're great when used to mop up egg yolk and bacon leftovers on your plate.
Grits are one of my favorite breakfast foods in the world! It takes me back to spending the night at my grandparents house as a small child. I remember waking up smelling bacon, biscuits, grits with heap loads of butter, and the coffee bubbling away in the percolator. Then hanging out with my grandparents after breakfast was done. Those are some of my favorite memories

The dictionary says this: Merriam-Webster defines irregardless as "nonstandard" but meaning the same as "regardless." "Many people find irregardless to be a nonsensical word, as the ir- prefix usually functions to indicates negation; however, in this case it appears to function as an intensifier," the dictionary writes.
It seems kind of silly to say irregardless when you could just say the actual accepted word regardless. It's just one of those cringy made up words in my opinion.

I'm guessing lobbying from the dairy/canola/olive oil industries has something to do with it. Most food culture changes in the last century or so are largely based in advertising campaigns. Like orange juice being considered a breakfast food.

it also has less poly unsaturated fats which are really bad (and staurated fats as a matter of fact are not as bad for you as u think) for you even though everyone uses them because theyre cheeper like canola/sunflower/soybean oil

Absolutely. If your one if those who must have sweet grits, just add a little sugar (I volunteer at a breakfast line, and we serve grits regularly). Otherwise, savory grits are supreme.

We do sweet grits in the south, but I've only seen *either* sugar *or* jam. Never both, and definitely never with nuts (and I'm fairly certain I've never seen it done with a milk base, definitely never a cinnamon infused one).
I sometimes feel like authenticity can be a creative handcuff when it comes to cooking.

Start with cold liquids add grits and stir every few minutes while it comes to a boil. Then reduce heat. Makes for a creamy finish product.

This scene in "My Cousin Vinny" is such an iconic example of the use of food in cinema that I am shocked that you didn't cover it until now.
Ngl, my heart kind of broke when you added nuts and honey and whatever else to the sweet grits. Sweet grits are the starchy side to a savory breakfast -- not to be treated like oatmeal. Rather, they are much like how plantains are used in Caribbean food. Sugar and Butter is all you need! I’ve since transitioned over to savory grits (salt, pepper, butter, and occasionally, cheese) from high school but every once in a while, those sweet grits still come in handy!

Personally I see a lot of potential in this recipe for sweet grits. People keep feeding me the "classic" sweet grits and wondering why I just pick at them. On the other hand, this might be something I actually enjoy. Just goes to show, you never know what might be helpful or interesting to others.

I’m from the south and the milk usually only goes in the sweet grits. Savory grits ( the best ones) get sometimes a little of heavy but mostly water because milk makes the shrimp and bacon taste weird. My favorite is just salt pepper butter and cheese.
Overall as someone from the south, i don't think it was that bad.
My big problem is he seemed to be going for a specifically Louisiana theme with the Shrimp & Grits (Creole seasoning and Tabasco sauce) but botched the trinity. I thought for sure that's where he was going with the onion and the green bell pepper, but then instead of celery he used scallions.

My South Carolina family always made their grits with milk-and would never make sweet grits at all! I suppose it’s something that varies region to region and family to family.
A recipe I'd love to see you tackle is Yeto's soup from The Legend of Zelda: Twilight Princess. Its primary ingredients are fish, goat cheese and pumpkin, which is great since pumpkins are in season. It'd be nice to see your own spin on it!

Wait wait wait. Seasoned the grits with only salt? The Southerner in me understands why the rest of the country doesn’t get the love for grits.. Grits get salted and peppered just as heavily as southern gravy. Extra credit for cheese grits, or milk to make a little creamier texture. It’s also very common to crumble the bacon or sausage into the grits.
I'm not a southerner but my family was born in the south. When it comes to grits I agree they have to be salt and peppered like gravy and I like to add a little garlic powder too mine when I'm feeling special 😅

@@KuntaKinte145 no I disagree. I love myself some non savory porridge (not exactly sweet as in no sugar but lots of fruit and nuts) but when I'm tired of that I mix it up with sweet grits. The texture is completely different and it does have a distinct taste. Grits pudding is a big staple here (Germany)

I’m both from Southern Appalachia and my family is Cherokee (the people who originally created grits), if you want the very best grits visit a traditional stone mill where they’re still being made just like they have been for hundreds of years here in the south. Might I also add that grits are the state dish of Georgia and also make sure you salt your water when cooking and add pepper afterwards! Never heard of adding milk and sugar to grits in my life and it’s not something I ever care to try and where I’m from adding seafood to them is also unheard of.

My dads family are from south Carolina, every year we have Christmas breakfast at my aunts house and it's always the same thing. Grits, scrambled, eggs, bacon, sausage and buttermilk biscuits....it's absolute heaven.

Ate this meal for breakfast nearly every day growing up, absolutely delicious. Nowadays it's a dinnertime staple for me, I usually smother an over easy egg or two with grits and top with cheese and crumbled bacon
Im a truck driver so i dont eat well wmost of the time but one thing i look forward to when i come home is when my wife makes me my favorite breakfast which is grits, bacon, eggs, and toast. She says its the easiest meal of her week but i LOVE it!

@@onepunchbee not sure how to describe it. It’s made from hominy, which is closely related to corn. If you don’t add anything to them, they taste very mild and plain. Like a thick porridge. I usually add some butter and cheddar cheese to mine after they’re cooked.

I went to one in Gainesville Florida for a while, and I guarantee you Waffle Houses are sooo much better.
(Only problem is that I live in South Florida, ironically one of the least Southern parts of the South.)
Growing up, the trick I was taught for smooth grits is to remove the pan from the heat before whisking in the grits, then returning it to the heat to continue cooking. Watching grits go in with a visible flame underneath gave me anxiety lol.
You can also slowly but surely pour in the grits while vigorously stirring the water. This takes practice though, and you're going to curdle for the first several attempts.
I grew up listening to the Christian comedian, Mark Lowry, and I remembered he did a bit once about "How to Speak Southern." This is roughly the part of the bit that's relevant:
"I was in a restaurant and a Northern lady came in and said, 'You know, I think I'm gonna try me one of them grit.' I said, 'Lady, you're gonna be hungry! It's grits! Gree-uuts! Or you could say Georgia ice cream!' "
I grew up in Georgia and we had grits, eggs and bacon (or sausage) several times a week. Usually with just salt, pepper and butter, but occasionally a gravy. We did not ever make them with milk or sugar.

I don't think any southerns will be mad at you, cause those shrimp and grits looked outstanding. But you should try your shrimp and grits recipe with the Holy trinity. Can't go wrong
Shrimp and grits is my favorite dish and I'm glad to see you do it justice here. I've also had it with chunks of tomato.
My grandfather called grits "stick with you food". We used to eat them Monday-Saturday for breakfast every single morning growing up, Monday-Friday served with thick cut bacon, scrambled eggs, and a glass of orange juice (Saturday it was with the left over fried fish from Friday night's dinner). My grandma ran a daycare and as soon as you wer old enough to start eating tablefood you were put on my Grandpa's grits for breakfast. Also sweet grits were forbidden.
But, yeah growing up my staple carbs were grits and rice. Grits for the morning, rice for the evening. Sunday Morning's Breakfast was fried rice made from Saturday Night's left over rice. The only times we didn't have rice were when my grandma made yakisoba, speghetti, or casserole.

So, coming off a recent announcement, I have a suggestion to make: the Tarte aux Fruits from Kingdom Hearts III. Known fruits are Sour Cherry, Strawberry, Blood Orange, Banana, Grape, Honeydew, and Watermelon. There's also a gorgeous presentation of both single serving and the uncut tarte for reference.
I don't make grits too often anymore, but when I do, I use equal parts milk and chicken stock. Makes for DEEPLY flavorful grits, and I constantly stir with a heavy whisk until they're done. Make for a very sore arm as well.
Not Southern exactly myself, by my southern grandma would be buying a ring for you if she saw this, she loved her southern food.

As someone from Texas, the only mistake you made for the shrimp and grits, was not making a gravy. Typically some of the shrimp stock is set aside and mixed with gravy master, milk and gelatin or a béchamel, other then that, it was amazing!
Probably my fondest memory of being in the "deep south" when I was in the Navy - the many iterations of Shrimp & Grits. Granted, Cheesy grits are a "as you like it" kinda thing. I prefer them cheesy but not everyone does.
This looked amazing and made me really crave it again after many years away from that area. (Yep, I'm a "damnyankee" as they lovingly called me...lol). My Southerner mom deprived me of many classic southern dishes so when I made my way around the South, I fell in love with so many dishes. This one is totally on my top ten!

First off irregardless is not a word...second of all while I love you Babish I feel like this was just an excuse to make Shrimp and Grits which is my all time favorite meal.
