How To Make Classic Peanut Brittle

To make peanut brittle, first grease a baking sheet or pan with cooking spray or butter and set the pan aside.
Combine sugar, light corn syrup, and salt in a medium-size heavy saucepan, and cook over medium heat, stirring constantly, until the mixture starts to boil. Use a brush dipped in warm water to wash down any crystals that may have formed on the sides of the pan.
Boil, without stirring, for 5 minutes or until a candy thermometer reaches 310 degrees. (Note to editors: Do not show a temperature on the thermometer.)
The mixture should be a golden color at this point. (Note to editors: do not include the part where we dip the metal spoon into the mixture.)
Add dry-roasted or shelled raw peanuts and cook 1 to 2 minutes, stirring until all of the peanuts are coated. (The mixture should now be golden brown.)
Remove from the heat, and stir in softened butter, baking soda, and vanilla. Don't
over-stir this mixture. Once you stir in the baking soda, it will foam up. Immediately pour it in a thin layer onto the greased baking sheet and spreading the mixture with a spatula or wooden spoon. You need to pour and spread it while it's still foamy because that's what gives the brittle its airy texture. Try to distribute the nuts as evenly as you can. .
Let it stand about 5 minutes or until hardened.
After it's hardened and is completely cool, break the brittle into pieces.

Added note: I didn't have lite corn syrup as they don't have there where I live in Europe so I used the thicker glucose syrup and added some water and still worked great. So if you're using the thick version, I think you need to water it down a bit as it's just too thick to mix with the granulated sugar.

@@lightdark00 Diabetes can be caused by a simple untreated infection in the pancreas or a number of other things, I have never heard of eating meat as a main cause of causing diabetes. I would suspect you are a vegan. Veganism is a life choice and is more about principle than health. The human body is well equipped to consume meat.

I make really good peanut brittle. Everyone tells me. My Peanut Brittle is Not Thin. i have found that most people like it thicker, as it is not as hard on your teeth. Also, my recipe called for mixing the Baking soda, the flavoring, and a little water in a small bowl, at the very start. Set aside. Then when it is time to add the Soda, Stir it a little. as it tends to settle. I think it mixes better when the Soda is not added dry. Use a Small greased cookie sheet, you will find that Thicker, not Thinner Peanut Brittle is preferred, as it is not as hard on your teeth.
My first batch had a center similar to honeycomb and it was delish. Can not repeat that for some reason. I fry raw peanuts which adds and extra step and I want to make sure the results are super delish.

@@tanyajones3630 As I said, thicker Peanut Brittle is not as hard on teeth. Thiiner PB is much more brittle, so people who have had a lot of work done their teeth can say, it is much harder on teeth. The key to brittleness is thinness. So, maybe I should not call my PB Peanut Brittle. Maybe I should call it Peanut Crunch. I didn't notice your message until today. Thanks

Leave out on pan that you put it in to cool, Havent tried the fridge but it doesnt take long to cool anyways..

just finished making this, it came out great but i like a little spice in my brittle so i suggest adding some cayenne pepper and about a half cup more nuts. other than that its great.

you dont get crystals on the side if you stir it b4 it boils.. ive never done it this way and mine is always good..nor do i use a temp thermometer
melt that butter first! stir to boil then swirl until color is reached that's how I've done it

Would Baking Powder work or do I absolutely need to use Baking Soda ?
I think soda because powder would make it rise and you don't want that well at least with cookies anyways baking soda helps the cookies flatten

If you spread the brittle, you loose some of the air and it gets hard. It will do this also if you shack it to even it out.

frederica broadney Hello sis, I think it works better if you don’t add water. I was also told to minimize stirring, and to mix the baking soda with the vanilla and a bit of water prior to cooking and set aside. When the recipe calls for adding the baking soda, make sure it’s evenly distributed and not settle in one spot.. the baking soda seems to be the key. Good luck 🌸😊🌸

Mine is more like honeycomb with peanuts I did the recipe exactly something went wrong
I love it when the results are like honeycomb. My first batch was that and can not get the same. Once I pour I do not move it except to gently slide on cookie sheet

Yes, just by a jar of peanut butter at your local supermarket.
Make sure its ingredients are nothing but peanuts ("natural" store brand, usually), without any HYDROGENATED oil added to make it look like it stays mixed. Don't be fooled by the HYDROGENATED mixes.
Despite following this recipe exactly, the caramelization at 0:50 never takes place, everything just crystalizes.

If its crystalizing then get the peanut brittle up to temp and immediately add the other ingredients then pour out.

You have to cook/ boil the sugar mix untill it becomes the colour of honey. If not the mix will never harden.
You could also add the nuts earlier. As in when the sugar begins to boil.
