The leaves are good eating too. I too grow OP Daikon for winter harvest. Some bacon grease, onion and a clove of garlic and the leaves become a side dish.
To be fair it doesn't really matter if it has more vitamin C unless you're eating it raw. Vitamin C is destroyed by cooking/heat. Just curious what usda zone y'all are in pulling those biguns out in April?

Yes but kimchi is fermented not cooked. We’re in zone 8
