    Karen, I made this yesterday. Oh Father, it was delicious!! I had to make some substitutions as I didn't have some things. Also, my pie dish was too shallow and I was out of walnuts, so instead of the topping you made, I used some leftover mushrooms and made a mushroom gravy that I had on the side. Whoa! Thank you for sharing your cooking gift!

    I’m making this for Thanksgiving. I would like to do a test run before the main event. Will your book be out before Thanksgiving? Did you use a mix of mushrooms?

      Yes. I always mix things up. Better flavor. I used some baby bella and some of the grayish oyster mushrooms I had on hand - which does not have the fishy smell. You can use a variety of your choice. Thanks for your question:)

    I have a question about your green banana pie. What are you using Green Bananas or Green Plantains, I 'm confused about difference.

      +Jon Woo I used green bananas, not plantains. There is a difference. I don't use green plantains because they are too starchy. I use the ripe plantains. Thanks for your question.

      Shado Beni, Chandon beni or culantro. It is the cousin of cilantro. It is used in the Caribbean instead of cilantro. They have the same smell and flavor - maybe slight difference in flavor but not detectable. Thanks for your question.

      Yes, some people don't like the flavor of cilantro. You can use italian parlsey or curly parsley instead. The recipe for the breadcrumbs will be in the cookbook. Coming out tomorrow or Friday. I finally completed today. Thanks for your support.

    Are green bananas the same as burro bananas?

      No, green bananas are the ones that are available in all supermarkets. They are longer in shape. Those are the ones we eat when ripe as yellow ripe bananas.(aka Cavendish bananas ) Burro bananas are not so common. You might find mostly in the Asian markets. They are green and turns yellow when ripe with black spots like ripe plantains. They are also wider and fatter shaped. Thanks for your question.

    After cutting the banana in half and the ends let it sit several hours in water and the peeling will be easier.

    I hate the sound of metal on metal, so I use wooden or plastic/Teflon utensils to stir my ingredients. I had to turn the sound off to watch this video. I love your cooking though, and look forward to more yummy dishes.

      Sorry to hear about your issue. I understand. The reason I use the whisk is because it does a better job of breaking up lumps.

      Yes i cant listen to the scraping of all the utensils on the pans either but i bear it because she cooks so well! :) mouth watering calling me to cook.
