Good natured river tours is one of the best things to do. Or Manatee Scenic Tours. Andretti Thrill Park is fun for the kids. There’s great golfing here. Great dining options. Melbourne is all about a calm chilled lifestyle.
As a person who was raised in Melbourne/ Palm Bay, it can be boring once you've done them your whole life. But as a visitor it does have many great things to do. I think you highlighted it perfectly.
You have great access to other places to enjoy from there though! Cruise port, airports, all of Orlandos many many attractions, down to Miami & the keys or up to St.Augustine and Jax all within a day trip. Not so bad that way. :)

I fell in love with that area of Florida 2 years ago on a FL roadtrip. We spent a few days in Ft Pierce before doing the Melbourne zoo on the way to Orlando. Property prices are so good in that area right now, and it’s the perfect mix of clean and quiet and mostly locals but close enough to a big city with touristy things also. I’m so excited to move there!

Lived in Melbourne for 10 years and just moved to midwest with my husband, followed him back to his home state. Was born and raised in NYC and Melbourne still has my heart. Paradise is our favorite beach. Going to visit for our 1 yr anniversary 🥰🥰🥰
The area where we live has a lot of school options and that seems to be true across Florida due to things like step-up and other programs. Look into affordable private education and/or charter schools in the area and see if there are any valid options.
I love exploring in and around Melbourne. We have a vacation house down here and just yesterday we found a really good restaurant downtown. It’s called the mansion, great service

Saint Augustine is pretty great! Cocoa Beach is right up the road from Melbourne, too. It’s worth the drive, and depending on your interest level, Sebastian is a short drive south and there are some neat things there, too-for kids, La Porte Farms (maybe adults ,too), and the Mel Fisher Treasure Museum.
What do you say? It is a horrible beach because you can never bathe in it, how to enjoy a beach if you cannot enter it to swim because of the waves and the horrible wind that there is always? If you look closely, the beach is always empty with a lot of waves, no one can bathe there! Where is the attraction to a beach where you cannot enter it and bathe?

Melbourne is a gorgeous untouched area with abundant wildlife. If considering a move this is the only area with amenities and a pristine beach.
Melbourne does have a good mix of qualities.
