To celebrate the new year, I made this video for you. First But, here's a short story to tell you a bit of the background behind the bread.
As you may know, my mother is half-Hawaiian and half-Chinese. As a child I visited her parents (my grandparents) in Hawaii several times and have fond memories of the food we used to eat. Has a very Hawaii diverse culinary tradition, some was brought by the Polynesians nearly one thousand years ago, while much of i t came from the people who settled in the islands in the late 1700's and early 1800's.
The Portuguese influence still lives today in the musical instruments they brought (the machete, which became the ukulele) and their sweet breads (now called 'Hawaiian Sweet Bread ').
Eight years ago after seeing my videos, an amateur baker from Hawaii contacted me asking for my Portuguese Sweet Bread recipe. He said his grandmother used to make it, and the following week he was hoping to make it for a get-together at his house that they were having to mark the one year anniversary of when she had passed. I sent the recipe to him. Two weeks later he wrote back to me. He said he had made it and as the aroma filled his home, he started to cry. Later that day, when the rest of his family came to his home, before they had even entered the front door they did the same. Said it smelled They just as it did when their grandmother used to make it. :)
This Portuguese Sweet Bread recipe is my tribute to the Portuguese and was the first recipe I developed, about 20 ago years.

Aloha! So happy I found your video. My husband is Portuguese/Filipino mix & we live in Laupahoehoe. He’s been begging me to find a Portuguese Sweet Bread recipe. His family unfortunately didn’t pass it down & his dad not thinking covered their families Portuguese oven for a garage! So traumatic for everyone now. We’re actually going to be building one ourselves hopefully soon with bricks from the old sugar plantations. Thank you for sharing the recipe at the end! I was looking on how to reach you for it & then saw it in the credits! Hope you read this and thank you for sharing your ohana background. My fathers side is Hawaiian, Chinese & Korean & my mother is Haole Swedish/Scottish. It’s a blessing to have such a variety of cultures & their unique experiences. I’m currently on a journey of baking & cooking authentic recipes from my family on all sides. Have a Hongwongi cookbook from 1973 my dad had given me for Christmas in 2012 and a handwritten cookbook from my kids Great Aunty Lani who’s book I lost a long time ago. She is well known for her incredible food from pupus, main dishes, desserts, bread, everything when she lived in Utah. So excited to start making some & sharing with my ohana. It’s amazing how many times you made the dough rest and how it never lost its strength. I can’t wait to try it. My family had an Italian bakery over 40 years ago and my dad made a Portuguese sweet bread that the dough rested overnight before baking, I never had anything to this day that was so good. I will let you know how I make out with your recipe. Thanks so much for the video. 👍🏻

Hello! First of all, congratulations on the quality of your videos. I share the same passion for the art of making (and eating) bread, and as a Portuguese I am proud of the heritage left by my compatriots wherever they went! About this specific recipe, I find many similarities with the current "Pão de Leite" (literally milk bread), still widely consumed today for breakfast. Keep up the good work!

A great story, and the bread looks fantastic. I grew up on the south shore in Massachusetts and my dad would always get a special Portuguese sweet bread the week before Easter and give it out to family and friends. The shop has been there as long as I can remember, and it's new(er) owners still make the special Easter sweet bread to my knowledge. They say the recipe is the same thing they make all year; but it seems to be more flavorful at Easter. It's braided and baked with whole eggs (#eggs determines the size, up to six). The shop is Central Bakery in Cambridge, MA on Cambridge St. My absolute favorite sweet bread bakery, no one else comes close - (in LA I settle for Kings Hawaiian sweet bread). One of the few things I miss, and if you're ever in Boston it's ~10 minutes to Cambridge from downtown by train.
Next time I'm in Boston, I'll check it out. Thanks for your story too!

What i miss most when i moved from Ct. to NC are the Portuguese rolls!!...OMG they were so good. They were a staple for sandwiches and straight up with butter 🤤

I used to make Portuguese Sweet bread a lot. Absolutely love it. Also love making Cornish Splits. I have a recipe for rolls that have been passed down for a few generations that uses a somewhat unusual ingredient that no one can ever guess when they eat them. They are a lot like Japanese Milk bread in consistency and have eggs, butter, sugar and milk with the addition of a special special ingredient. I would love to send it to you. Its a large recipe but I’m sure you would still have to adapt it to your own needs if you found you liked it. Let me know where I can send it.

I truly enjoyed watching you make this bread. I've been keeping my grandmother's tradition of making this bread going for about 15yrs now and I've been working on updating the recipe a little for using my stand mixer more and my elbow grease less. ;) I'm always afraid I'm going to over work the dough using the mixer. When you said to knead for 15 min., was that 15 min on the dough hook, or 15 min my hand?
My great grandparents were a part of the Portuguese people you spoke of who left their influence on the food and traditions in Hawaii in the 1800's. They were from the Azores and were brought to Hawaii as arranged by the Portuguese and Hawaiian kings to work the cane fields as indentured workers. My great grandparents were indentured for 5 years and once they were free, they moved on to California. Even though their children and grandchildren were raised to be Americans, they still kept their traditions in food and culture alive by making sure those traditions and values were passed on to each new generation. I'm the first generation that is only half Portuguese but I take great pride in my roots from both parents and making this bread is a particular favorite of mine.
Thank you very much Jacki for sharing that, I just saw your comment now, six months later. When mixing a dough like this that has fats (butter, eggs...) it helps if you mix it for a little while until there are no dry pieces, then let it rest for 15 minutes or so for the flour to absorb the fat, then mix it some more for another few minutes.
I know it's another branch of cooking, but, do you find Norwegian cod fish to make a proper bacalhoada over there?

Thanks for the kind words Emerson. To be honest, I don't know if there is a name for the technique. The pulling technique that I use to finish the small round loaves I learned during my first job as a dishwasher at a pizza place many years ago. ;)

Hi Patricia, They are a little bit heavier than the potato rolls. Personally I like the potato rolls a little better for burgers and the Portuguese Sweet Bread for pulled pork.

I was SO HAPPY with the results I did a little dance to myself as they came out of the oven. They looked AMAZING. So soft and light to the touch. Hello, was wondering, what do you use this bread for, dinner rolls, sandwich rolls.... slicing for toast? What food does it go well with?
Yes Sandy, you can use it for any of those that you mentioned. I like it best either toasted for breakfast or as a bun for burgers or pulled pork.

Is the recipe private to your business? What size is the white container you use to poof the dough? Awesome job btw!
Dan, the recipe is at the end of the video but in order to see it you'll need to view it on a computer monitor since it looks small. I'm not sure on the size of the container, but generally it's best if your dough takes up about 33% of the container it is proofing in.
