蚝油 1大勺
生抽 1小勺
小苏打 1/10小勺
蛋清 1个
淀粉浆 适量
油(封盖牛肉) 适量
西兰花 330克
姜 一小块
蒜 1瓣
油(过油) 适量
油 2大勺
盐 1/4小勺
水淀粉 适量
香油 1小勺
ingredients :
beef flank 350 g
dark soy sauce 1/2 tbsp
oyster sauce 1 tbsp
soy sauce 1 tsp
baking soda 1/10 tsp
one egg white
corn starch slurry as desired amount
oil ( cover beef ) as desired amount
broccoli 330 g
ginger a small part
garlic 1 clove
oil for fry as desired amount
cooking oil 2 tbsp
salt 1/4 tsp
starch water as desired amount
sesame oil 1 tsp
I just made this recipe and it turn out perfect! The trick to diluting the bicarbonate is very good. Thanks for sharing. Here in Brazil, we eat a lot of meat, please when you can give us more meat recipes. Best wishes.

If you partially freeze the beef (not solid, but just a bit to make it not move as much) you can slice it very thin with a knife. (An old chef trick.)
