Huge problem, it isn’t night at the Dragons Keep, it’s just a smoke cloud covering the sun as you can see at the end of the Traveling montage. And you also see the dragon multiple times in the daylight afterwards.
This could explain so much, all the Blonde Princess wanted was her own Fairytale but with Knights showing up after sunset and trying to kill her thinking she was a Monster, she grew resentful. Hence why she fell for Donkey, someone who wasn't a Knight or even human but still complimented her eyes and praised her beauty, something she always wanted.

It makes sense, because Dragon is literally the only character that doesn’t speak while every other animal does, which could tie in with her curse.

I know most creatures in shrek are intelligent, but the dragon always stood out to me by how human her response was to donkeys compliments.

The problem is they didn't enter the Dragon's Keep at night, Fiona was still human, and there was daylight before and after Shrek rescued Fiona.
