I made a batch yesterday - so yummy! I put a handful in a bowl to nibble with a cup of coffee like crisps (I'm trying to reduce my dairy intake). I'm wondering if the basic recipe could be converted into a savoury biscuit using herbs & cheese, topped with something salty. Everything is so expensive nowadays, so I'm trying to make as many things as I can, including breakfast cereal, jams, condiments & various snacks etc. It's saving me quite a bit of time & money this way. I'm tired of trying to decide what to cook every night, so I prep all my favourite dishes (once a week), freeze them & reheat as desired. I love this channel - lots of great ideas.

I've recently also found a good vegan YT channel called the Plant-Based School (I'll post a link) - he uses everyday regular ingredients. I do make my own milk using soaked oats & rice (about 250 ml each) with water - use a blender & then strain. I usually make 1 litre then freeze half as it doesn't seem to keep very long (I use this in my coffee or if a recipe calls for a little milk). Also the YT channel Baking with Shirley - check out her no eggs, no milk baking playlist. Good luck.
These didn't last very long - all eaten in just 4 days! So handy to have on hand whever one feels like something sweet with coffee (or tea). I'm about to make a 2nd batch. I'm also going to try a savoury option (I like something sweet in the morning, but prefer savoury at night for some reason). In SA we make apricot jam biscuits using shortcrust pastry - you crumb together flour, sugar & butter, but keep some crump aside to go on top. You use the roll out pastry as a base (use a square tin), cover with a layer of jam - such as apricot - and then use the crumbs on top (press it down gently to keep it together but preserving some crumb). Bake at 180C for approx 15 min (until brown), allow to cool then cut into squares. I might make these using this base recipe (flour, oat flour, butter, sugar & spices (cinnamon & mixed spice is very nice). Tx for this awesome recipe. I still want to try your cocoa cereal breakfast recipe - we finally got a new oven so I can start baking again!

Made this today and I didn’t like it. I will try again with the following tweaks. 1.) more sugar in the base. I used jaggery powder which was not sweet enough. I am going to use brown sugar next time 2.) apple juice instead of water. Again helping the sweetness be more prominent because it def was not here 3.) it was dry so I think I made oil in the dough or melted butter in the dough 4.) get them supper thin, thick pieces won’t get crunch and they will come off more like a cinnamon graham cracker like mine did

They maybe need longer to cook then? I haven’t tried this recipe yet, but when I make my sourdough crackers, (which is a very similar process) I actually let them cool a bit, and then flip them over and bake a second time. This makes them very crunchy! Wondering if a similar method would work here.
@LilDebs78 hi! I don't think baking them longer would've made a difference. A butter cookie and a toast crunch are worlds apart. The texture and even taste were completely different. I might have done something wrong I guess, so if you decide to try the recipe, I'd be curious to know if it works for you!
