Fudge, caramel & other deserts. Some ice cream recipes use it. Some ppl put it in their coffee too. You just put the rest of it up. It's like any other thing if you don't use it all at once.

For those wondering, I made these with Hokkaido pumpkin from a jar because I'm lazy and they turned out amazing! I did have to cook down the pumpkin a bit before I started. In the video the butternut squash almost has the consistency of mashed potatoes, where as my pumpkin was a lot more liquid. My cooking time was also quite a bit longer than 15 minutes, my condensed milk also seemed more liquid. Also be careful with the white chocolate, I almost bought a white chocolate that was not made with cacao butter but a vegetable oil by accident! I imagine if it is made with that it does not harden much. They are currently in the fridge, I may cover the outside with some brown sugar and pumpkin spice instead! I think that will be delicious. I will also make some with white sugar and see which people will prefer. Thank you @Chocolate Cacao for this wonderful recipe!
Brazilian here, so i just *had* to comment i guess... brigadeiros are super easy to make and such a great way to experiment with flavors! This particular recipe reminded me of the "cajuzinho", a party treat that uses a brigadeiro base + chopped peanuts to make a dough we shape into tiny cashew apples, complete with another peanut on top as a cashew nut. Great job on them pumpkins, they look amazing 🥰
YAY Brigadeiros are my favorite! It perfectly fits this channel bc it's all about chocolate. We have lotsa different kinds! With coconuts, peanut, strawberries, and the list goes on~ I'd love to see a video about brigadeiros. My favorites are with dark chocolate bars, yummy. And here some tips that I've learned while making them: It's easier to evaporate water when you heat everything in the nonstick saucepan; If you will double or triple the recipe, you likely will need to do the same with your time heating the mixture; It's more prettier to put smaller pumpkin seeds on your truffles. Overall, follow the exact same steps and amount of ingredients in this recipe, you will be satisfied with the end result. I hope that will help, let me know how it will turn out :)
hi! i just wanted to ask, did you use 15g of almond powder after or before sifting? because i know sometimes after you sift almond powder it ends up being less grams than what you start out with

A particularly long-necked Butternut is used here for canned "pumpkin" people use in pies. They only have to use the neck part, no seeds and fiber to worry about. Roasted, salted pumpkin seeds are a treat,too.
If you put butternut squash in the oven (instead of the microwave) for like 40+ minutes, they caramelize and get really sweet :3 It's almost like pumpkin pie without the spices..... 8O

@@semidesert_cat No, microwaves cook stuff faster. D: He probably put it in for 20-or-so minutes, But in a real oven it's different because the food isn't rotating. I like to put the squash cut-side-down so they don't get dried out, but you could probably also wrap them in foil too!

yooo i just made this on halloween!! making the pumpkin shapes was a smidge more time consuming than initially expected but it was worth it! i used pine nuts instead of pumpkin seeds for decoration and it added nutty finish that I loved and looked great, thank you so much for the recipe and video :)

A trick for you Mr Cacao - put the whole pumpkin into the oven, don’t need to cut it. You can get the nice soft cooked flesh out so easily after! I find it takes about one hour at 180 for a pumpkin this size!
@RM V2 I use a crock pot (also called slow cooker, similar to instapot I think), it works great and no mess! Put small to medium sized pumpkin in for about 8 hours on low or about 4 hours on high. You could try it in a regular pot with closed lid on a gas or electric burner, or even a heavy pot over a fire (or buried in a pit of coals Dutch oven style), but I have not tried that so be careful and keep watch over it if you do.

OK I made these and they were amazing! I personally don’t like white chocolate but I thought I would make these to take to everyone at work for treats. I made them and they were fairly easy and they looked absolutely adorable and when I tasted one it was DELICIOUS! These would also be perfect for a Thanksgiving treat or really any Fall festivity. Delicious taste of pumpkin and not cloyingly sweet.

Absolutely amazing channel! My wife and I watch 1 of your videos every night before bed and dream of all these amazing creations! We want to try and making one of them eventually, but we're nowhere near as skilled as this!
I tried this and even went to buy a digital scale since the measurements are in grams. Followed the recipe TO THE T but for some reason the dough remained sticky even after the 3hrs of chilling. My only thought is that either A) the mixture needed more cooking time than 15 minutes or B) the measurements given are not precise. The video looks like it uses significantly more almond flour and white chocolate than what 15g and 30g respectively actually weigh in at. If I had to guess, I'd say it was the flour measurement which is off (more would make the dough firmer I'd assume). Despite that, they still managed to hold their shape (barely) after rolling in sugar and they tasted good, so no harm no foul I guess. Just made the decorating more difficult.
I had the same problem! My mom thinks the butter measurement was the problem, since it looks like he cuts more butter than 10g AND it would harden as it cools... but neither of us are truffle/brigadeiro experts. It easily could be the white chocolate, or both. ¯\_(ツ)_/¯

Edit: I tried this recipe yesterday, they were extremely cute and delicious. I got to the conclusion that these brigadeiros tastes a lot better when they are covered with cocoa powder, sugar is too sweet at least for my taste. Thank you for the recipe.

OK I made these and they were amazing! I personally don’t like white chocolate but I thought I would make these to take to everyone at work for treats. I made them and they were fairly easy and they looked absolutely adorable and when I tasted one it was DELICIOUS! These would also be perfect for a Thanksgiving treat or really any Fall festivity. Delicious taste of pumpkin and not cloyingly sweet.

I think he meant "take the butternut squash *flesh* and put it in a blender", not put the seeds into the blender.

I tried this and even went to buy a digital scale since the measurements are in grams. Followed the recipe TO THE T but for some reason the dough remained sticky even after the 3hrs of chilling. My only thought is that either A) the mixture needed more cooking time than 15 minutes or B) the measurements given are not precise. The video looks like it uses significantly more almond flour and white chocolate than what 15g and 30g respectively actually weigh in at. If I had to guess, I'd say it was the flour measurement which is off (more would make the dough firmer I'd assume).
Despite that, they still managed to hold their shape (barely) after rolling in sugar and they tasted good, so no harm no foul I guess. Just made the decorating more difficult.
I made it yesterday. My one is a bit sticky too! I guess that’s why he rolled then on sugar.. but, still my one was not as solid as his.
I had the same problem! My mom thinks the butter measurement was the problem, since it looks like he cuts more butter than 10g AND it would harden as it cools... but neither of us are truffle/brigadeiro experts. It easily could be the white chocolate, or both. ¯\_(ツ)_/¯
It's supposed to be sticky, that's how brigadeiros are
