Kerala Style Elephant Foot Yam Fry - Chena Fry

- Ingredients
Elephant foot - ½ kg
Curry leaves - 2 sprigs
Tamarind - small ball.
Turmeric powder - 1 tsp
Dry red chilli - 4 nos
Fenugreek seed - 1 tsp
Cumin seed - 1 tsp
Mustard seed - 1 tsp
Salt - 1 or 2 tsp
Oil - 3 or 4 tbsp
Method
Firstly we have to peel and cut the yam into small cubes .
Then wash and drain set aside.
Take a bowl add tamarind and water squeeze them well ,drain and set aside.
Take a pan add yam cubes ,tamarind water ,turmeric powder and salt cook them well .
Drained and set aside.
Heat oil in a pan add dry red chilli ,fenugreek seed and cumin seed fry them well and keep aside.
Then crush the fried ingredients like red chilli,cumin seed etc into fine powder and set aside.
Heat oil in a pan add mustard seed ,lets cracled.
Add curry leaves ,,cooked elephant foot yam and salt mix them well.
Then add crushed powder ,mix well and fry them well.
Remove from fire and set aside.
Serve and enjoy the healthy yam fry with meals
