I had boneless skinless chicken & I cut it up in cubes then cubed my potatoes same size as the chicken but I added more potatoes than what was called for (my children love potatoes). My daughter said it would still be good even if I had left the chicken out. Thank you for sharing this delicious recipe.💞
I made this today for dinner. Hubby LOVED it! I did use cilantro on top because I ran out of the other. The sauce turned out perfect like yours. The flour helped it not be on the watery side. Made it with you Mexican rice from your book.

Hi there 😊 I cooked this and let me tell you....my husband and son raved about it! I did tweak it a little thou. You used a seasoned salt in the chicken coating. I chucked in some Cajun seasoning that I had hanging around. Also added more onion and garlic. Before cooking the potatoes I tossed them in a little olive oil and smokey paprika. I found that some of my potatoes didn't cook through (maybe I didn't have it high enough heat?) But that's okay because I put it away overnight and the next day put it in the oven and cooked it low and slow. The result was amazingly tender chicken and an absolutely wonderful flavour....with cooked potatoes 😂 Thankyou for a new and inspiring chicken dish that will definitely stay on our menu! I'm in Australia so I could cook this in my hooded BBQ too in summer and serve with a nice refreshing salad. Look forward to trying more of your recipes.
I have extra tomatoes that are ripe, so this is perfect timing! Instead of chicken, I'm going to add some leftover barbeque ribs to the stew after 10 minutes of simmering. Should I sprinkle them with flour or cornstarch first before adding them to the pot? Thanks Mama ;)

That was amazing recipe. I just added jelapeno while frying onions and parsley instead of epazote. I definitely will be cooking this more often!
