Iron utensils are pure metal, as single element whereas cast iron utensils are alloyed with more elements like carbon, silicon etc.. Iron metal undergoes oxidation when exposed to air and moisture to form rust while cast iron is not oxidized by moisture.

There are various methods to season the pan, as explained in the video. I season by heating the pan first and oil them while it’s hot and reheat it again and wipe off the excess oil! Oils like coconut oil, olive oil, pig fat is good whereas thin oils like sunflower oil is not good as oil breakdown immediately(can’t handle high heat). It’s important to let the pan heat and expose the pitted surface of the cast iron, The oil should be heated for a long enough time in cast iron, So that the fatty acids oxidize and reorganize together (polymerize) into a new plastic-like layer of molecules. In this way, newly formed layer will form a nonstick surface (just like Teflon) on the cast iron. Keep it in mind cooking acidic food can disturb the seasoning and you have to season again.

Scrub well to remove all rust and then follow the seasoning method
Chechy cast iron tawa pre seasoned vangy but no use 1 lit. Coconut oil um 1 kg dosha maavum waist aayatallate itu vare tawa ready aaytilla
Are you sure your batter is right? If too much cooked rice is added in the batter, it might stick to the pan. Before making dosa, cook and egg and see

After cooking , wipe dry. Heat the cookware and apply oil. The more you use the better it will become if you take care as mentioned
