Yesterday I saw "காஞ்சி ஸ்பெஷல் பஞ்சு பரோட்டா" in UA-cam. The secret explained was to handle the dough very gently without exerting a lot of pressure. Ingredients were just very simple as explained here. No egg, milk or a lot of proofing.
