There are different kumquats.
Taste one to decide if boiling is needed.
No need to boil them at all they don’t have bitterness actually their skin is sweet and the fruit is little sower.
I would not discard the water it would have a lot a fragrance in it.
i use the water for cold brew tea, add sugar for taste, voila…kumquat flavored tea

Why do you have to boil them three times?
to keep it from being sour I think. My mom used to do that with lemon peel jams
Vulist, wrong!!! The skin is where all the sweetness and flavor are and nutrition, you just boil out the nutrition and flavor and pour them down the drain. It's the pulp that is sour, the skin is really sweet.

I didn't say e should make jam without boiling it, we just shouldn;t do it 3 times and pour the water out twice down the drain losing all the nutrition, natural sweetness and flavor, just boil once an I make mine after slicing the kumquats, not whole... they are sour inside and when you will bite into one, that sour taste will be too much... and sweetness doesn;t permeate inside. Then I fill crapes with it. Of course you can make it whole if you like the contrast between sweet and sour.
