Thank you, thank you, thank you! We've been making beer floats for the past 30 years, yet new friends don't believe me. Maybe they're not qualified to be friends. On a hot, Summer day, we sometimes like a brisk lager - think Heineken, but don't actually use one. That stuff is terrible. Anyway, it's about time this was sanctified in a Chef John video.
That "Not Your Dad's Root Beer" stuff workz wonderfully. Add a scoop of ice cream, or if you're feeling adventurous, a good sized shot of Bailey's Irish Cream. You'll drink the entire six pack before you know it!

Putting the ice cream in first might not give you that picturesque look, but if you put the ice cream in first and you use a cold glass it *does* make parts of the drink into a slushie, which I think is a worthwhile tradeoff.
I have never heard of using beer in an ice cream float, never ever. It sounds repulsive, but I so admire Chef John, thar I will make a beer float. I enjoy & love making many of his recipes, so why not...

Where I live this is called "black cow". You can have in many different ways, but my favorite is as a shot. You can pound that all day without getting too full or intoxicated, and you don't have the risk of drinking warm beer.
I have to say, I’m a bit hesitant to try a beer float. But, that being said, you’ve never lead me astray throughout all years and recipes of yours I’ve tried. I will try this with a good Raspberry Lambic I have been saving.Thanks chef.
Gave this a whirl and was very pleasantly surprised. I didn’t think beer would really go well with ice cream, but they surely do. The Lindemans Framboise Lambic I used went really well with the Vanilla Ice cream. Will definitely be making this again. Next time i’ll test this with Apricot ice cream.
Best beer float recipe ever period. 1 half bottle either goings double chocolate stout or breakfast stout. Blend with two scoops dulce de leche icecream. Then pour in rest of stout Amazing.

@@SpidermanandJeny Yep. I haven't seen it in a while, but it's a stout with a definite bourbon note. The brewer describes it as "A barrel aged Imperial Stout with roasty malt character intermingled with deep vanilla tones, all dancing in an oak bath." Very nice.
I was skeptic but this actually was pretty tasty, thanks. I have tried it with few versions It worked well with Japanese beer called believe it or not SUIYOBINONEKO ‘Wednesday’s Cat’ (lady’s version), the beer is citrusy and on the sweet side and was even better with Hitachino Nest Espresso Stout. Funny thing, the version I loved best (and had to try until my wife stopped me) was the one with no ice cream in the beer. I am of Caribbean heritage, on a Sunday evening we would use Guinness stout, condensed milk, nutmeg, and yes, vanilla ice cream. It would be mixed up and my mom would pour a little white rum into it! Delicious! We called it punch! Oh and by the way it would be poured into a glass that had a lot of ice!
Fruity Hefeweizen with vanilla or a complementing fruit is very refreshing. Recently went to a place that served a Blueberry-Lemon gelato which paired nicely with a Blood Orange Hefeweizen.
Totally gonna try this with a hard cider! Angry Orchard Easy Apple is a less sweet offering and works well for a pork roast too. Use onion and an apple cut into sections as your rack and put the roast on it and then put in oven. (Roast is of course pre-browned in the pan .) Then add 1/2 to 3/4 in of beer to the pan and roast as usual. Remove from oven when done and reduce pan drippings/cider to make a sauce and serve onions and apples on the side. Makes a great Roast!
Oh hell yea! Just of the top of my head, I know two perfect beers for this! White banana beer (wheat beer, whith a hint of banana) And White stout (has a lovely white chocoltatey flavour) Also I wanna try this with fruit sorbet. Might work with types of ipa and so on!
I tried with with a home brewed (from a extract kit) dunkel weiss and it was pretty good. Never got around to trying it with the vanilla bean bourbon stout we made, but I bet that would have been pretty good.
Just tried with the most known Irish dark beer (a stout one.) and Coffee ice cream that I had in my fridge. Personally I didn't like the taste at all. But you are the Frederick II's moat of your Beer float throat. So you decide.
When I was in my late tee....cough, early 20's we made floats with root beer fortified with Jägermeister. Nice and herbal with that creamy smoothness from the vanilla ice cream.
When I had a Guinness for the first time, I remember thinking it tasted somewhat like chocolate milk. I can’t believe I’ve never heard of, or thought myself of, making a beer float. Definitely giving this a try!
i went to a Red Robin restaurant and they made a milkshake version using a stout, ice cream, whiskey and Irish cream liquor and I was ready to die happy upon completion!! Sooo goood!
I love beer floats, and while stout floats are wonderful, I actually prefer porter floats. I've never tried the fruity beer method, but now I want to try it.. with a fruity ice cream, of course. My preferred beer + ice cream is Founder's Porter + Blue Bell Pecan Pralines and Cream
You should try a cherry-geuze with a cherrychocolate icecream. Best is to NOT use an expensive kriek, but one of those commercial ones, with sweetners added. Liefmans for example. The combo is stunning.
Hey that Belgian sour is made at a place I used to live real close to. Walking distance to a taproom which charges 5 or 6 dollars for pints of 8-10% ABV ale is a dangerous, but wonderful thing.
Hey Chef John. Love the idea/recipe. You could do an easy beer for brewing at home. ;-) A buddy and I started doing that recently: We have done a dark Hefeweizen, a just regular dark beer and a Pale Ale is sitting in my basement and still processing at the moment. It is a bit lengthy to do, but definitely worth it and a lot of fun. Especially, if you are really a lover of beer as you said. ;-) It is not insanely expensive and definitely a fun experience with a friend. If you are going to try this, DO NOT forget to let the beer rest after the fermentation. We were letting it ferment in a tank first, then in the bottles (both times for about two weeks) and the beer was ok. After letting it sit in the cold for about 4 weeks, just leeting it rest, it was great. Much clearer and the it actually pretty much was what we wanted to achieve in taste.
Great to see Chef John not only loving good beer, but also knowing about beer. How about some more beer recipies? I make a whole weat no-knead bread with a Belgian Double. I make a coq au vin with a dark style beer. Even a beef or pork stew can work with good beer. Beer batter for frying is awesome. Chocolate cake with stout is also a winner. Any other tips/recipies? An American ale with a whiskey ice cream, that sounds good. We have a boutique ice cream shop here in Columbus, Ohio (Jeni's Ice Cream) that makes a really great OYO Whiskey with Pecan ice cream (a local distillery).That was the first flavor I thought of when I realized you meant actual beer and not root beer.
My darling husband has been enjoying the occasional Guinness Float... a pint of Guinness and a scoop of French Vanilla ice cream. He started having them in the early 90s.
There is a famous pub in Portland Oregon, called McMenamins that has been doing this for years with their home brewed stout, and it is wonderful. I would recommend it, but, I don't recommend going to Portland.
Ice cream+root beet schnapps+root beer=world's best root beer float. The alcohol content of the schnapps stops the ice from forming around the ice cream, making it far creamier than a regular float. Will have to try the beer float some time.
I had a friend who used to do this as a party trick, though I believe at least one could be interesting. This young man was an Upstate NY Forestry School grad - not Paul Smith's but maybe Wanakena. You probably have thoughts about that.

In my early 20's I made Jagermeister root beer floats a number of times. Very tasty.

Small brewery in Texas called Shiner has a seasonal s'mores stout. It's fairly sweet and chocolatey and I feel like it would be amazing as a float
