Vegan Quesadilla Recipe

A quesadilla is a Mexican dish and type of taco, consisting of a tortilla that is filled primarily with cheese, and sometimes spices, and then cooked on a griddle. We are making Vegan Quesadilla with chickpeas, homemade queso dip, salad and it's effortless and easy for a quick bite or even lunch boxes. This Vegan Quesadilla Recipe is so delicious, filling, easy and a perfect meal that you would want to prepare all the time.
Traditionally, a corn tortilla is used, but it can also be made with a flour tortilla, particularly in northern Mexico and the United States.
Simply cook the filling ingredients together in a pan, add them to your tortilla along with some vegan cheese, fold over the tortilla and wait for the cheese to melt. You can prepare this with any filling, feel free to switch this up to suit your tastes for your own quesadilla!
Cut them into little triangles and serve with vegan queso dip and salsa. These are great to have as party food or part of a Mexican feast with nachos, tacos or burritos.
