    I'm 22 and currently, in college studying for a degree, I don't even like. Societal pressure makes me constantly anxious and depressed and seeing your videos about becoming self-sufficient makes me hopeful that I too one day can live off-grid and be somewhat free from the cage most of us are in.     Just made a ¼ quantity with leftover Christmas plums. The only difference I can pick from mine and Lea & Perrins is that the L&P is more 'malty'.
    I added about 60ml of fish sauce for the umami flavour and a TBSp of onion powder. Really happy with the result. We don't use much Woosty (Kiwi here) so my litre of sauce is heaps for us for the year.

    Love the sause recipe. There are two things about your recipe that are great. No Tamarind ( some people are allergic ) and No Fish. Your recipe is more like Sweet and Sour plum Sause.

    Never heard woozy. Must be a QLD thing. Here in NSW a wooz is a scared person, weak, chicken, gutless

      Agreed about never hearing it called woozy and I live in north QLD. Back in the 1970s it was common to call it black sauce, but I don't hear it called that now either.

    finally someone on youtube who pronounces Worcestershire correctly. you Aussies and us Brits are similar in a lot of ways. although we just say Worcester Sauce. it amazes how many people pronounce shire wrong. (Shear not shire)

      Oh, that's interesting, I'm a fairly RP Brit and I would pronounce 'shire' as 'shuh' - so wooster-shuh. I'm sure different Brits would pronounce it differently though as we have loads of different accents.

      Can you blame us? The UK is so full of oddly named areas that trace their etymology to any mix of the history of Breton, Celtic, Old Low German, Middle English, Frankish, Vulgar Latin, etc, and the pronunciations and spellings of those names has changed numerous times over the centuries. If you took a modern British English speaker that had never seen names like Worcestershire, Thames, Frome, etc, they would pronounce them wrong, because their pronunciations are archaic and ill-fitting in Modern English.

    Oh yes a series of what you do with all your self sufficient grown fruit and vegetables would be great! Just a thought. If already done then refreshers would be great.
    I had no idea plum was the main ingredient to Worcester sauce.
    I cant help but wonder if you take part in the farmers market. If you have overloads of stuff after gifting and giving it away you could indeed sell the extras to put back into the homestead. Making a little money never hurt anyone.

    Worcestershire sauce here in the UK (from Worcester) is made from fermented anchovies

      Yes. This recipe is much closer to our Brown Sauce, like HP.

      I'm thinking this is probably more similar to A1 or HP than it is to worcestershire sauce, both in terms of consistency and flavour.

    Some Worcestershire formulas call for the inclusion of tamarind pulp/flesh (Tamarindus indica) and anchovies, with a fermentation/maturation period. Although, as you say, recipes for food (in this instance, a condiment) are not set in stone, and there are many delicious variations you can try. There is no 'right' or 'wrong' formula; in my book, if it tastes good, then it is good to go.

      @@infernaldaedra The guys in Worcestershire were John Lee, and William Perrins.
      Here is the story:
      The Origin of Worcestershire Sauce
      Worcestershire sauce has its roots in India but was actually created by accident in its namesake town of Worcester, England in 1835. The Lea & Perrins company says Lord Sandys (whose identity is disputed) had returned home to England to retire after successfully governing Bengal, India for many years. He so missed his favorite Indian sauce that he commissioned drug store owners John Lea and William Perrins to come up with a reasonable facsimile.
      The original intent of the chemists was to keep some of the batch to sell in the store, but the fish and vegetable mixture had such a strong odor that they decided otherwise and stored it in the cellar. It lay forgotten for two years until it was rediscovered during a clean-up mission. The batch had aged into a wonderfully flavored sauce which was bottled and quickly became a hot item with customers.

      There is probably enough sugar and vinegar to make that unnecessary, especially with no large pieces in it. I would definitely sterilize my bottles and caps, though.

    Mark - You are a man of many wonderful talents and loads of information. I had no idea that plums were in Worcestershire sauce! After viewing the ingredients, I made the assumption that “treacle syrup” is what we call molasses here in The U.S. Is that correct? Best wishes mate!

      That's just false. Lea & Perines Worcesteshire sauce is a fish based sauce and this recipe has almost none of the same ingredients in it. This is not Worcestershire by any means. You're incorrect and anyone can verifying my statement by fact checking online.

    I just made this with plums I had in my freezer (and some baby food plums because I was a little short). I followed the recipe except I cooked my plums and made a strained pulp first. My family love this! It was fun to make this during our negative 14 degree (F) temps. Everyone was surprised at the fabulous taste and that I used plums as the base.     Have you actually done any kind of a taste test using your woozy vs actual Worcestershire? I'd like to know if someone has done an actual taste test and what the results are? Especially since Worcestershire sits in vats fermenting, then is aged out 18 months before they ship it.
    I also wondered why there wasn't any celery in it?

    Interesting. I had no idea that plums were the base for Woozy (love the name!). QUESTION: isn’t it necessary to sterilize the bottles/caps before filling? And are filled bottles “canned” or put thru a hot water bath? I’m concerned about mold or spoilage. Love your channel, Mark. Thanks for recipe. Will definitely give it a go!!

    Just be really careful when labelling the bottles. Make sure you don't get them mixed with worm compost tea, or comfrey tea.

    Hey Mark, I'm a subscriber from Canada. I love your tips & advice. Your videos on raised beds have been great, and I find mice can't climb up metal walls vs. wood, so another added bonus of corrugated metal. Regarding this video, traditional worcestershire is made with fish product; you don't have anchoivies in your sauce, or did you intend this recipe to be vegan? Cheers.

    I feel lucky I don't have to cover my fruit trees. Yes birds take a share but *usually* I get most of the crop, not always. Farther N. Commifornia.

    Mark, you are always a delight! When you started talking about making sure to use a large enough pot and that only a rookie... I immediately knew you were going to show yourself changing over to a larger pot. Even though I felt it coming, I still had a good laugh when you showed it! Haha! Happy New Year!     I'd love a bottle of that ,but it's not worcestershire sauce if it's not got the fermented fish which sits in barrels for over a year . What you've made is plum sauce . I like what he does on this channel so please don't take my comment as a slur

    Have you ever tried homemade British brown sauce? I’d tried a commercial one and really wasn’t a fan but I found a recipe that sounded amazing so I gave it a go. It’s Granny Smith apples, onion, prunes, sugar and a little chilli and malt vinegar. Insanely good. I’m about to make a second batch. I will happily use that instead of bbq sauce now. Well worth a try.

    That’s a HP style sauce, A1 or Brown sauce. Real Worcester sauce is much much thinner and a lot stronger. Anyway it looks great.
