It's not neccessary to be authentic, it just taste different or caters to their surroundings which is 100% fine. Kudos to the all chefs who make the effort to learn to make dishes.

Singapore Teochew Bak Kut Teh is a version of pork ribs tea with a clear garlicky and peppery broth while the Hokkien style bak kut teh that has a darker and richer soup base that is packed with herbs. The one you having is the Hokkien version.

the satay already coated with the gravy..I would say it less wasteful than giving it as a dip. I can bet the heat of that sauce is tone down to suit Japanese's palate towards sweeter.

There's a popular one nearby me in San Jose called Straits. I haven't been there is awhile but it's tasty. I can't remember any specific Singaporean dishes and honestly it is like pan-Asian. There are Malaysian restaurants around. They tend to be Chinese Malay so a mix of both cuisines.

Paper wrapped chicken is a real thing in Singapore although it doesn't seem to make an appearance everywhere. There was a restaurant many years ago famous for paper wrapped chicken and you'd see a good 'char' on its surface or skin and you would have the whole wing or drum in the paper, if i remember correctly. The restaurant itself was a old-school marvel of a platformed house with complete kampong house charms and the whole nine yards, literally a time machine if you visited it back then. Now the restaurant is gone but the 2nd generation owner continues to operate a stall Blk 262 Jurong East Street 24, Singapore 600262 but that was last known in 2020. May be worth a visit!
