Beyond being incredibly moving in its own right, the Old Man Voll chapter is one of the few times Frieren unambiguously declares something to be important to her. Magic? Meh, it's ok. The ring? I guess, maybe. But her memories? Important. So important that she's offended when Voll implies that she might have forgotten.
Not only her memories, but her memories of Himmel, she says that Himmel was the reason for her to know people, in the same way that Voll's wife was the reason for Voll to defend the village. So Frieren is saying that Himmel was as important to her as Voll's wife to the old dwarf. I think Frieren understood that she also, in her own way, loved Himmel.
I personally consider ep14--16 a relatioship mini saga. Eash episode contains one part of relationship, from falling in love, love grows and the lost of your loved one. And this is epsidoe they also have some interesting framing, a lot of close up of characters' eyes, and some direct cut in between Voll and Himmel. It sells the emotion so well when they cut back to Frieren smiling at herself.
the first part of this with old man voll is my favourite self-contained story in all of frieren, it's incredibly moving. "i can no longer remember her face or her voice or her eyes but i continue defending this village for an _important something_ " - every detail is gone from his memory, and he's just anchoring himself in the faith he has, that the love he felt was real. a lot of people with dementia must feel that way. and him validating himmel when they meet because he can sense that himmel has a good heart.... always makes me tear up a bit
It was done so well. I could see the way she felt offended that she "would forget" himmel, and even that Himmel felt that it may have happened. It was so good, and as you could see filled me with a lot of sadness.
When you make a promise like that to someone you love you are making it to two people, them and you. It mattered to him, and he remembered the love and the feeling if not the details. Contrast that with the discussion between Aura and Frieren about Himmel. Frieren says she isn't blasting the bodies of the minions like before because of Himmel, and Aura can't understand because he is dead so to her anything he wanted is completely irrelevant. A promise is only made to the other person.
